Unpasteurized — lacto-fermented eggplant with fermented lemon, garlic, and chili pepper
Acidic, savoury and lively: an aubergine cream unlike any other

This isn't your classic version of babaganoush. No tahini, no oil in abundance: here, the eggplant is lacto-fermented with salt, and surrounded by fermented lemon, garlic, parsley, herbs, and chili pepper. The result is a cream with a completely different flavor profile—sour, savory, and deep, with the umami typical of fermented foods and a spiciness that smoothes without being overpowering. Where traditional babaganoush relies on the richness of sesame seeds, this one focuses on liveliness: it cleanses the palate rather than weighing it down. It's an unpasteurized product, therefore alive, with its active cultures still active in the jar.
Baba ganoush originates in the Levant—Lebanon, Syria, Palestine—and is traditionally a cream of grilled eggplant, mashed, and mixed with tahini, lemon, and garlic. Its name is one of the most curious in Middle Eastern cuisine: in Arabic, baba means “dad” and ġannūǧ It evokes something pampered or spoiled, and the most common interpretation is that the dish was a kind of culinary term of endearment, something prepared to please someone at home. What all versions have in common is the eggplant smoked over the embers: a vegetable that on its own would be neutral and spongy, transformed by the fire. Here the process is different—not the fire but the lactic acid bacteria—and it leads to the same goal: to give character to an eggplant.
Lacto-fermentation is one of the world's oldest preservation techniques: salt selects the lactic acid bacteria naturally present on vegetables, which consume sugars and produce lactic acid, lowering the pH until the environment becomes inhospitable to harmful microorganisms. It's the same principle used for sauerkraut, kimchi, and pickled cucumbers. Pasteurizing the finished product would make it more stable and easier to handle, but it would eliminate those very bacteria: choosing not to do so means jarring a still-living food, with its microbiota intact and a flavor that continues to slowly evolve over time.
It's a very light product—30 kcal per 100 g, with just 0,3 g of fat—and rich in fiber, 3 g per 100 g, which comes entirely from vegetables. It contains no preservatives, flavorings, or additives: its preservation is ensured by the salt and acidity produced by fermentation itself. This is precisely why the salt content is significant, 3,9 g per 100 g: it should therefore be used as a flavorful condiment and not as a layered spread, and those following a low-sodium diet should keep this in mind. A spoonful is enough to give character to an entire dish.
Bucolica produces artisanal fermented vegetable products, choosing not to pasteurize to preserve the microorganisms developed by fermentation. Essential recipes, vegetables and salt as the basis, and long shelf lives: a way of preserving food that doesn't require additives because it's been working for millennia.
Eggplant, salt, parsley, fermented lemon, garlic, herbs, chili pepper. Traces of cabbage, leeks, and damsons.
Fermented, unpasteurized product.
After opening, store in the refrigerator, always scooping with a clean, dry spoon. Since it's a live, unpasteurized product, fermentation proceeds slowly: it's normal for the jar to feel slightly under pressure when opened, for small bubbles to form, or for the flavor to become more acidic over the weeks. Open the lid carefully, holding the jar over the sink. Thanks to the salt and acidity, the product will keep for a long time in the refrigerator.
