Two ingredients, and one of them is almost everything: 81,8 grams of blackberries per 100 grams of product. It's a very high percentage, and you can taste it—this jam tastes like blackberries, pure and simple, with its natural balance of sweetness and acidity, its dark purple, almost black color, and the small, crunchy seeds that remain in the pulp. The sugar, cane and organic, is present in modest quantities: total sugars stop at 28,5 g per 100 g and calories at 133, significantly lower than the average jam. No added pectin, no preservatives, no flavorings: just Italian fruit and cooking time.
The blackberry is the most democratic fruit there is: it's not bought, it's picked. It grows wild along field margins, along country roadsides, and in uncultivated lands, and between August and September, anyone who wants a scratch can fill a basket with them. Botanically, it's a bit of a deception: what we call a blackberry isn't a berry but an aggregate fruit, composed of dozens of tiny drupelets, each with its own seed—which is why you bite into it and feel that unmistakable grainy texture. The blackberry, for its part, is a plant that agriculture has always fought against, because it invades and takes over vacant spaces; but it also provides shelter and a larder for birds and insects, and its thorny hedges are among the most vibrant environments in the countryside. Transforming its blackberries into jam means giving value to what no one cultivates.
Blackberries are among the fruits richest in anthocyanins, the dark pigments with antioxidant properties, and contain vitamin C, vitamin K, manganese, and a significant amount of fiber: this jam contains 4,3 g per 100 g, a high amount derived from the abundance of fruit and seeds. But the most interesting figure remains the sugar content, 28,5 g per 100 g, and 133 kcal: many commercial jams exceed 50 g of sugar and 250 kcal. Here, the sweetness comes largely from the fruit itself, which is why the flavor remains so distinctive.
I Casali del Pino is an organic farm just outside Rome, with a dairy and agricultural production that follow the same principles: essential processes, home-grown or selected raw materials, and no industrial shortcuts. From jams to cheeses, the approach remains the same.

Store the jar tightly closed in a cool, dry place, away from light. After opening, refrigerate and consume within a few days, always scooping with a clean, dry teaspoon. The high percentage of fruit and low sugar content, which are key advantages here, make this product more delicate than traditional jam. Color and consistency may vary slightly from batch to batch, as fruit is never identical.
