Una Garlanda's Semi-Processed Original Chinese Rice

Chinese Originario Semi-Processed Rice is the most rustic version of this "old" historic conservation variety from China, popular in Italy since 1904, when its generous yield earned it the nickname "abundance." Partial blanching leaves part of the outer layer of the small, compact, round grain: a rice that holds its shape beautifully, perfect as an accompaniment to traditional dishes and ideal for cooking in arancini and timballi. Cooks in 18-23 minutes, or 9 in a pressure cooker. Una Garlanda grows it in Rovasenda on just 9,9 hectares, with seed reproduced on the farm since 2008, certified organic, without fertilizers or pesticides. Comes in paper packaging.
 
 
 

The roots of this semi-processed rice are deep in tradition

If rice fields are in the North, it's in the South that round rice has become a monument: the Sicilian arancini, disputed between Palermo and Catania even over its gender, originated as a travel food that enclosed an entire meal in a golden sphere; the Neapolitan sartù, a sumptuous court timbale, was the cunning with which the 18th-century monzù (traditional rice cookers) endeared rice to a city that called it "sciacquapanza" (a dish of savoury soup). Both require the same thing: a round, compact grain, capable of binding with the filling without falling apart. This semi-processed Chinese Originario, with its firm and flavorful texture, is the perfect heir to the tradition that unites the Piedmontese rice fields with the cuisines of Southern Italy.

Una Garlanda is the Stocchi family's organic rice farm in Rovasenda (Vercelli): three generations of rice growers who preserve ancient conservation varieties by cultivating them with green mulch, without chemicals or fertilizers, in rice fields that universities study for their extraordinary biodiversity.

Traceability: from seed to plate

The rice: Chinese Originario variety (historical conservation variety) grown in Rovasenda (VC), Piedmont, on 9,9 hectares; flood irrigation with water from the Sesia River and the Marchiazza stream; seed reproduced on the farm since 2008, certified organic; mechanical broadcast sowing; no fertilization performed; management of spontaneous weeds through rotation, forage crops, green mulching and crushing of cyperaceae; no phytosanitary treatments performed; mechanical harvest in October 2023 (35.000 kg); storage in warehouse.

The processing: carried out in Rovasenda (VC) in the company rice mill in 16 phases, with partial bleaching of the grain, from drying with direct and indirect fumes up to the optical sorter and passage in CO2, with storage in a cooled warehouse.

The packaging: Manual and mechanical packaging in Rovasenda (VC) in paper suitable for contact with food (Sealing Gascogne gr. 45 + parchment), completely plastic free.
