Tripel – 8,5% vol – Light and Golden
Safe and comforting like a raft in a storm, a journey of flavors between the North and the Mediterranean.

Nikulas Tripel Beer is a creation for the daring, for those who aren't afraid of the difficult but fair path. With a substantial 8,5% ABV, this pale, golden-colored Tripel presents itself as a beer of great structure and warmth. The sensory profile is a labyrinth of sweetness and freshness: enveloping notes of quince and apricot blend with the scent of fresh yeast and the liveliness of mandarin. Despite its strength, it maintains a balanced bitterness (2/4), making it a profound yet extremely pleasant drink.
This beer represents the pinnacle of Birrificio San Gimignano's production. Unfiltered and unpasteurized, Nikulas preserves the essence of its select ingredients, offering a full body and an aromatic complexity that evolves with every sip. It's the perfect meditation beer, offering comfort and security like a sturdy raft on the waves, ideal for those seeking an authentic and uncompromising brewing experience.
Choosing Nikulas means supporting a project that values biodiversity and the local area. Brewed with organic barley malt and sugar, it follows a traditional refermentation process that enhances its unique character. Each 33cl bottle reflects the commitment of a brewery that has been experimenting with ancient grains and cereal populations since 2013 to bring a vibrant and resilient terroir to the glass.
Nikulas was a legendary Icelandic pilgrim and navigator of the 12th century. His epic journey took him across Scandinavia and down the Val d'Elsa, passing through the very lands where the brewery stands today, before reaching Rome and continuing on to the Holy Land. The story of his return to his home ocean inspires this beer, which features a label depicting him being carried south by the waves and stars on a night of a waxing moon.
The San Gimignano Brewery transforms this historical legacy into a productive mission. Through the concept of "Intorno-Umwelt," the brewery engages with the stories and journeys of past travelers, bringing the value of hospitality and discovery into the contemporary world. Every sip of Nikulas is a tribute to those navigators who courageously united distant cultures and lands.
Consuming this craft beer means choosing a product free of synthetic chemical residues, respecting your body and the environment. Nikulas, being unpasteurized, maintains the active yeasts and enzymes, making it easier to digest than commercial beers. The richness of natural aromas derived from fermentation offers a complete sensory pleasure without the use of additives or artificial flavors.
The brewery's philosophy, based on planting cereal populations with over 2000 varieties in the same field, guarantees a resilient and vital raw material. This biodiversity translates into a richer and more resilient beer, reflecting an agriculture that self-selects excellence, reducing external intervention and offering a final product that is a pure expression of the health of the land.
Serve Nikulas at a temperature of 8-10°C to allow the apricot and mandarin notes to unfold. Accompany it with a glass of 71% Organic Dark Chocolate 100g; the contrast between the bitterness of the cocoa and the sweetness of the Tripel will create a lingering and regal finish.
The alcoholic structure of beer perfectly cleanses the palate from the fats of cheese. It is ideal with Aged buffalo cheese 350g or a mature pecorino. The quince note in the beer acts as the perfect "liquid compote" for the cheese.
Use this beer to accompany structured dishes such as tempeh glazed or savory tarts. For a surprising end to the meal, pair it with Organic Quince Jam 220g spread on artisanal biscuits, directly recalling one of its main descriptors.
Il San Gimignano Brewery srl is a micro-roastery founded in 2013 with a pioneering vision of organic beer. Their production is based on experimentation with ancient Tuscan grains and the creation of an "Intorno" (surrounding area) where people, stories, and nature merge. Projects like the "Cantina Errante" (Wandering Cellar) demonstrate their dedication to spontaneous fermentations and the use of heirloom fruits.
