Here, the extra virgin olive oil isn't just a preservative, but an ingredient: it enhances the product's aromatic fragrance and highlights the sweet flavor of the anchovies, softening them on the palate. If salted anchovies are as old as the Mediterranean, the fillet in oil is its most refined evolution: it originated between the 19th and 20th centuries, when families and the first coastal workshops began hand-finishing cured anchovies by immersing them in oil, transforming a basic preserve into a small, luxury delicacy, ready to serve. Since then, the anchovy has undergone its most astonishing transformation: from a humble sailor's food to a favorite ingredient of great chefs, capable of adding umami depth to any dish.
