Barik Primitivo PGI is Cantina Giara's barrel-aged red wine, made from 100% Primitivo grown in the Jazzo di Stefano area of Adelfia, Puglia. Its distinctive feature, which gives it its name, is the twelve-month maturation in 225-liter French oak barrels, which smoothes the tannins and enriches the bouquet with spices and balsamic notes. Unfiltered, it features a ruby red color with intense purple hues. The grapes come from a forty-year-old vineyard trained using trellises, on calcareous-clay soil, at 231 meters above sea level. Maceration on the skins lasts seven to nine days, with spontaneous fermentation. An elegant and refined expression of Primitivo according to Giorgio Nicassio's biodynamic philosophy, it is a wine of great intensity, persistence, and balance.
Aging wine in small oak barrels—barriques—is a refined art rooted in French winemaking traditions, particularly those of Bordeaux and Burgundy. Fine-grained, prized French oak imparts noble tannins and delicate notes of spice, vanilla, and balsamic aromas to the wine, while also providing a slow and beneficial micro-oxygenation that softens its structure. Applying this technique to Primitivo di Puglia, a warm and generous grape, creates a fascinating dialogue between the sunny power of the South and the elegance of wood aging. The name "Barik" celebrates this very union. Cantina Giara thus unites the Apulian winemaking tradition and the noble art of barrique aging, creating a Primitivo with an international character while remaining faithful to its natural soul.
A wine produced through spontaneous fermentation using indigenous yeasts, unfiltered, and organically and biodynamically grown, represents a conscious choice for a more natural and authentic drinking experience. Red wine, rich in polyphenols and resveratrol, is traditionally associated with cardiovascular health when consumed in moderation. The vineyard's low yields concentrate these noble substances, while the long maturation in oak naturally refines and stabilizes the wine. Biodynamic cultivation on calcareous-clayey soil, without synthetic products, guarantees a lively and authentic product, with minimal sulfites. Any residues are natural and testify to the wine's authenticity. Consumed responsibly, it showcases Puglia's noblest native grape variety, interpreted with elegance and mastery.

It features a deep, luminous ruby red color with intense purple hues, with the natural haze typical of unfiltered wines. Any residue on the bottom is entirely natural and testifies to the authenticity of the product.
On the nose, it is elegant, intense, and persistent: it opens with spice and balsamic notes, followed by fruit preserved in alcohol, ripe black cherry, and licorice root. A complex and refined bouquet, the result of aging in French oak.
On the palate, it's very soft, with quality tannins and a good nose-palate correspondence. It's warm, with lovely savory and mineral notes, very balanced, and long-lasting. An elegant wine that further refines with age.
An elegant and structured barrel-aged red wine, it pairs perfectly with fine red meats and large cuts of meat, game, rich dishes, and mature cheeses. Its complexity and persistence also make it a perfect meditation wine, best served at 15-16°C after adequate aeration.
Cantina Giara is a small, family-run winery in Adelfia, Puglia, led by winemaker Giorgio Nicassio. They practice exclusively biodynamic viticulture, using natural, spontaneous fermentation vinification without fining or filtration, and define themselves as "artisans of wine."
