Zucchini descends from the pumpkins of Central America, where they were cultivated as early as three thousand years ago by pre-Columbian civilizations, along with corn and beans, in the famous "three sisters." Having arrived in Europe following Columbus's voyages, it was Italian horticulturists, in the 19th and 20th centuries, who selected the varieties to be consumed unripe, which today are known worldwide as "zucchini." The yellow zucchini represents one of the most fascinating selections resulting from this painstaking work: farmers saved the seeds from year to year, selecting the brightest-colored and sweetest-fleshed fruits. A small treasure trove of horticultural biodiversity that today returns to our tables.
