Organic Siccagno Tomato

The tomato that grows almost without water: strong flavour, meaty pulp and creamy sauces, from a seed that has been guarded and reproduced for years

A glass of water a week and everything else is flavor: the tomato that has learned from thirst to be unforgettable.

The Organic Siccagno Tomato from the Coraggio Agricultural Cooperative

The Coraggio Agricultural Cooperative's Organic Siccagno Tomato is born from a precious heritage: a seed the cooperative has been reproducing for years, selected for its extraordinary ability to adapt to an increasingly arid climate. The result is an extraordinary tomato: it can grow almost without water—it receives the equivalent of a glass a week!—and it is precisely this virtuous thirst that concentrates the pulp's bold flavor and meaty texture, yielding incredibly creamy sauces. Less water means more of everything: more flavor, more vitamins, and more antioxidants like lycopene. The essential tomato, in the best sense of the word.

The roots of this Siccagno Tomato are deep in tradition

Dry-land cultivation is one of the great rural traditions of Southern Italy: in the sun-drenched hills where water was a luxury, generations of farmers learned to grow tomatoes with almost no irrigation, selecting year after year the seeds of plants that were best able to withstand thirst—and discovering that this deprivation was a gift, because the thirsty plant concentrates all it possesses in the fruit. This is the tradition of the dry-land tomato, passed down from harvest to harvest through the most ancient agricultural practice: saving the best seed for the coming year. Today, that wisdom is once again highly relevant: in a changing climate, the seed that can survive on little is the future that comes from the past.

Choosing Organic Siccagno Tomatoes means taking care of yourself

Concentration is its nutritional superpower: growing with very little water, siccagno develops a pulp richer in nutrients per pound—natural sugars that give it its bold flavor, vitamins, and precious antioxidants like lycopene, the heart-healthy red carotenoid that, in a rare case, becomes even more bioavailable when cooked: its creamy sauces are concentrated health. Grown organically and with minimal water consumption, it benefits both those who eat it and an increasingly thirsty planet.

How to Best Use: Organic Siccagno Tomatoes

  • THE CREAMY SAUCE — Its declared vocation: the fleshy pulp dissolves into a dense and velvety sauce without the need for long reductions: flavour it with theOregano from Natural Saline and serve alongside the Organic Friggitelli Peppers fried, Palermo-style.
  • THE ABSOLUTE BRUSCHETTA — When the tomato is so concentrated, very little is needed: cubes of dried tomatoes on semi-wholemeal Campagna bread hot with leaves of Organic dried marjoram, oil and some crystals of Fine Grey Breton PGI Salt: bruschetta stripped down to the bone, elevated to the max.
  • Panelle with tomato sauce — Sicilian home dinner: fry the panelle with the Organic Chickpea Flour and accompany them with a freshly dressed siccagno salad: the island's street food meets its most authentic tomato.

The Producer: Coraggio Agricultural Cooperative

The Coraggio agricultural cooperative cultivates the land and the future together: seeds reproduced and preserved year after year, organic farming that is attentive to a changing climate, and artisanal transformations without shortcuts—a way of farming that looks ahead while remaining faithful to tradition.

Food container

Store Siccagno tomatoes at room temperature, away from direct light, and never in the refrigerator, which would dull their aroma and sweetness. Thanks to their plump, low-water content, they keep longer than regular tomatoes—and are perfect for making sauces and preserves during the height of summer.
