The Coraggio Agricultural Cooperative's Organic Siccagno Tomato is born from a precious heritage: a seed the cooperative has been reproducing for years, selected for its extraordinary ability to adapt to an increasingly arid climate. The result is an extraordinary tomato: it can grow almost without water—it receives the equivalent of a glass a week!—and it is precisely this virtuous thirst that concentrates the pulp's bold flavor and meaty texture, yielding incredibly creamy sauces. Less water means more of everything: more flavor, more vitamins, and more antioxidants like lycopene. The essential tomato, in the best sense of the word.
Dry-land cultivation is one of the great rural traditions of Southern Italy: in the sun-drenched hills where water was a luxury, generations of farmers learned to grow tomatoes with almost no irrigation, selecting year after year the seeds of plants that were best able to withstand thirst—and discovering that this deprivation was a gift, because the thirsty plant concentrates all it possesses in the fruit. This is the tradition of the dry-land tomato, passed down from harvest to harvest through the most ancient agricultural practice: saving the best seed for the coming year. Today, that wisdom is once again highly relevant: in a changing climate, the seed that can survive on little is the future that comes from the past.
Concentration is its nutritional superpower: growing with very little water, siccagno develops a pulp richer in nutrients per pound—natural sugars that give it its bold flavor, vitamins, and precious antioxidants like lycopene, the heart-healthy red carotenoid that, in a rare case, becomes even more bioavailable when cooked: its creamy sauces are concentrated health.
