The Busiate of the Crisafulli Mill

Organic Margherito Semolina Busiate are made by the artisanal pasta factory Molino Crisafulli with Margherito semolina, an ancient Sicilian wheat grown directly on the mill's farm, using organic methods and without pesticides or insecticides. They are bronze-drawn, giving the pasta its characteristic rough surface that perfectly holds sauces, and slowly dried at low temperatures, a process that preserves the grain's organoleptic and nutritional qualities. Busiata is a typical pasta shape from the province of Trapani, with its distinctive elongated spiral shape, designed to hold full-bodied and flavorful sauces within its coils. Made exclusively with organic semolina from the prized Margherito, the "twin" of Senatore Cappelli, they are an authentic, digestible pasta with an unmistakable flavor.
 
 
 

The roots of this format are deep in the Trapani tradition

Busiata is one of the most characteristic and ancient pasta shapes of western Sicily, particularly the Trapani area. Its name derives from the "busa," a type of thin stem—traditionally the stem of the ampelodesmus, a Mediterranean herbaceous plant, or a wire—around which the pasta was rolled by hand to achieve its characteristic spiral shape. This ancient technique, passed down from generation to generation by Sicilian housewives, creates a rustic, irregular shape, perfect for scooping up sauces. Busiata is inextricably linked to pesto alla trapanese, one of the symbols of western Sicilian cuisine: a raw condiment made with basil, tomato, almonds, pecorino cheese, garlic, and oil, born from the fusion of Ligurian tradition and Mediterranean flavors. Molino Crisafulli renews this legacy with its ancient grain.
 
 
 

Choosing Busiate Margherito means taking care of yourself

Ancient grains like Margherita are now being re-evaluated as valuable allies of health. Compared to modern grains, they are naturally higher in protein and have a simpler, less tenacious gluten network: this makes the resulting pasta lighter and more digestible, while maintaining excellent cooking resistance. Bronze-drawing and slow drying at low temperatures best preserve the proteins, intense aroma, and nutritional characteristics of the grain. Durum wheat semolina pasta is a valuable source of complex carbohydrates, which provide slow-release energy, as well as plant-based proteins (approximately 11,8 g per 100 g), minerals, and B vitamins. Molino Crisafulli is a historic mill in Caltagirone, Sicily, operating since the early 1900s and managed by the Sammartino family. It directly cultivates ancient Sicilian grains and hemp using organic methods and a short supply chain, grinding them with stone and cylinder mills using artisanal methods. It also produces semolina pasta from its ancient grains in its own artisanal pasta factory. It is the guardian of the milling tradition and the island's precious native grains.
