Oats, rye, rice, barley, and soft wheat combined with sesame, sunflower, pumpkin, chia, flax, and hemp seeds. Organic Mulino Sobrino flour. Sourdough starter.
An explosion of crunchiness and toasted aromas that celebrates the richness of the earth

Five-Grain and Seed Bread is the micro-farm's most delicious and structured offering. It's made with a flavorful and expertly balanced blend of five varieties of noble grains: oats, rye, rice, barley, and soft wheat. This complex base is enriched with a generous helping of sesame, sunflower, pumpkin, chia, flax, and hemp seeds, creating a unique texture where the softness of the crumb alternates with the pleasant crunch of the seeds.
Made strictly with sourdough starter and the finest flours from Mulino Sobrino, this bread stands out for its intense and rich flavor profile. Each slice embodies the philosophy of meticulous breadmaking, where long leavening times allow the flavors of the different grains to blend perfectly, offering a deep taste that evokes the scents of the fields and the authenticity of a short supply chain.
It's not just a side dish, but a true highlight of the table. Its dense texture and bold flavor make it ideal for those seeking a satisfying tasting experience, capable of supporting bold pairings or enjoyed on its own to appreciate all its toasted nuances and the unmistakable aroma of artisanal baking.
The use of a blend of ancient grains like rye and barley takes us back to the origins of peasant breadmaking, when bread wasn't just made from wheat but from a blend of all available crops. This "biodiversity" on the plate guaranteed sustenance and a complete range of nutrients. The return to these flours, stone-ground according to tradition, allows us to rediscover forgotten flavors, far removed from the standardization of industrial white bread.
The beating heart of this preparation is the sourdough starter, which carries out a lactic fermentation that transforms the starches and makes the final product not only more aromatic but also chemically distinct. It's a method that requires patience and dedication, the same one our grandparents used to ensure that the bread stayed fragrant for days, preserving its organoleptic qualities.
This bread is a treasure trove of health benefits thanks to its extraordinary variety of ingredients. Oats and barley provide beta-glucans, heart-healthy soluble fiber, while rye contributes to a prolonged feeling of satiety. The addition of seeds transforms each slice into a natural supplement of essential fatty acids, such as the omega-3s found in flax, chia, and hemp seeds, which are essential for cardiovascular health.
Furthermore, the long natural leavening process with sourdough significantly improves the product's digestibility. Lactic acid bacteria pre-digest gluten and break down phytic acid, allowing our bodies to better absorb the valuable minerals found in whole grains and seeds, such as iron, magnesium, and zinc. A complete food that nourishes and provides energy without weighing you down.
Lightly toast a thick slice to bring out the essential oils in the seeds. Spread a generous layer of Nocciomiele Organic Honey and Hazelnut Cream 240g for a hint of dried fruit, or opt for the strong taste of Organic Chestnut Honey 500g which marries divinely with rye.
The dense crumb is perfect for supporting intense umami flavors. Create a refined appetizer by spreading the Organic Voghiera Black Garlic Cream 70g and completing with a thread of Novello Extra Virgin Olive Oil Stone Ground 2024 raw.
Serve it as the perfect accompaniment to a platter of cured meats and cheeses. Its crunchiness creates a perfect contrast with the softness of the Coral salami from wild Norcia pigs or with the flavor of a Aged buffalo cheese 350g.
Triticum is a small, agricultural bakery in Rome born from the passion and research of Matteo Valentini. After years in fine dining, Matteo chose to rediscover the connection with ingredients and the anticipation of leavening, promoting an ethical supply chain that begins with the land and dedicated farmers. Awarded the "Tre Pani" (Three Breads) award by Gambero Rosso, Triticum uses exclusively sourdough starter and farm-to-table flours to create products that tell stories of their local area.
