Rare red-fleshed apples: anthocyanins, intense flavour, and restored biodiversity

Roncaglia's 100% Red Pulp Apple Juice is an extraordinary product that celebrates reclaimed pomological biodiversity: a pure juice obtained from rare heirloom apple varieties characterized by pinkish-red pulp (rather than the creamy-white of common apples) thanks to the exceptional presence of anthocyanins—powerful polyphenolic antioxidants responsible for the red-purple color in fruits such as blueberries, blackberries, and red grapes. These anthocyanins not only impart a spectacular pink-red color to the juice but also superior nutritional properties, a more intense, complex, slightly tannic flavor, and that rarity that makes this juice a unique experience impossible to find in large-scale retail outlets dominated by industrial juices made from standardized commercial varieties. Produced by the Roncaglia farm, which organically cultivates 40 hectares in Bricherasio (Turin, Piedmont) and recovers over 60 forgotten local heirloom apple varieties, this juice represents an extraordinary commitment to genetic preservation, the valorization of agricultural biodiversity, and artisanal production that prioritizes quality and uniqueness over commercial standardization.
Red-fleshed apples are a small group of heirloom varieties that nearly disappeared during the 900th century, when fruit growing shifted to a few aesthetically perfect commercial varieties (Golden Delicious, Red Delicious, Granny Smith, Fuji, Gala), abandoning hundreds of local varieties considered "uneconomical." These specialty apples include varieties such as Redlove (a modern selection from heirloom Asian varieties), Baya Marisa, Thornberry, Weirouge, Hidden Rose, and other traditional European or Asian varieties characterized by flesh ranging from pale pink to intense red, almost purple, depending on variety and ripeness. The color comes from anthocyanins (cyanidin, pelargonidin, peonidin), which are present not only in the skin (as in common red apples) but also penetrate deep into the flesh through natural genetic selection conducted by farmers over the centuries.
The juice is produced using the same artisanal method as the Pear Juice: organically grown, pesticide-free apples are harvested at optimal ripeness, selected, washed, pressed using a soft pressing process (slow/cold press) to preserve heat-sensitive nutrients and enzymes, gently pasteurized for shelf life, and bottled. The resulting juice has an extraordinary pink-red color (the intensity varies depending on the variety and batch), a slightly fuller texture than regular apple juices (red-fleshed apples tend to have more pectin), an intense, aromatic, floral aroma with notes of red fruits (raspberry, strawberry, currant), a complex, layered sweet-tart-tannic flavor where natural sweetness is balanced with lively acidity and a light tannic astringency from anthocyanins (similar to young red wine or black tea), and a lingering finish that leaves a clean, fresh mouthfeel.
Nutritionally, heirloom apples are superior to regular apple juice: extremely high concentrations of anthocyanins (responsible for their red color) have demonstrated powerful antioxidant, anti-inflammatory, cardioprotective, neuroprotective, and anti-aging properties; the presence of tannins (astringent polyphenols) adds further antioxidants and that characteristic "dry" mouthfeel typical of red wines or teas that some people appreciate; the vitamin C, quercetin, chlorogenic acid, and other phytonutrient content is generally higher in heirloom varieties than in modern commercial varieties, which are bred for productivity and appearance rather than nutritional quality.
As honestly stated on the label: the juice is a natural product, so color and flavor may vary between batches depending on the prevailing red-fleshed apple varieties of the year (Roncaglia likely grows several different varieties), seasonal weather conditions, and degree of ripeness. This natural variability is a rich testimony to authentic craftsmanship connected to real agricultural cycles.
Apples (Malus domestica) originate in the mountains of Kazakhstan/Kyrgyzstan, where forests of wild apple trees (Malus sieversii) still grow today. These trees exhibit extraordinary genetic variability, including some with lightly colored flesh. Through millennia of cultivation and selection in Asia, Europe, and the Americas, humanity has created thousands of apple varieties adapted to different climates, uses (fresh, cooking, cider, drying), and aesthetic/sensory characteristics.
Red-fleshed varieties emerged sporadically in various regions: some traditional Asian varieties (especially Chinese and Japanese) had reddish flesh, while in Europe some ancient Alpine or British varieties had pink hues. These apples remained local curiosities, never commercially released because they were considered aesthetically "strange" (consumers associate white-fleshed apples with colored flesh that can appear "altered") and less productive than commercial varieties.
Only recently—with the movement to restore agricultural biodiversity, consumer interest in antioxidant-rich "superfoods," and the work of breeders creating new modern selections from ancient varieties (such as the Redlove series)—red-fleshed apples are experiencing a rediscovery and appreciation. Visionary companies like Roncaglia, which cultivate over 60 different varieties, are preserving this invaluable genetic heritage, which would otherwise be irretrievably lost through varietal extinction (when the last plant dies without being reproduced, the variety disappears from the Earth forever).
Red-fleshed apples offer a significantly superior nutritional profile to common white apples: extremely high anthocyanins (the same antioxidants as blueberries, blackberries, and red grapes) with demonstrated cardioprotective properties (they reduce cardiovascular risk by improving endothelial function, lowering blood pressure, and reducing LDL oxidation), anti-inflammatory (they modulate inflammatory cytokines), neuroprotective (they protect neurons from degeneration, improve cognitive function), anti-diabetic (they improve insulin sensitivity), and anti-tumor (preliminary studies show inhibition of tumor cell proliferation); total polyphenols 2-3 times higher than common apples, including quercetin (an anti-inflammatory, anti-allergic flavonoid), chlorogenic acid (a glycemic regulator), and catechins (antioxidants also found in green tea); vitamin C preserved by soft squeezing; soluble pectins that regulate blood sugar and cholesterol, and nourish the intestinal microbiota.
Recent scientific studies show that regular consumption of anthocyanin-rich foods significantly reduces the risk of chronic degenerative diseases. Red-fleshed apples offer anthocyanin concentrations comparable to berries in a more affordable, accessible format.
The calorie content is similar to regular apple juice (about 45-55 kcal per 100 ml from natural sugars (fructose, glucose, and sucrose), with negligible protein and fat content and minimal sodium. A 200 ml glass provides about 90-110 kcal, a significant dose of anthocyanins and polyphenols, and a tasty hydration with functional benefits.
Consumption should be moderate (1-2 glasses per day) given its natural sugar content, preferably with meals to mitigate its glycemic impact. The rich polyphenolic profile makes this juice almost a "natural supplement" of antioxidants in a tasty liquid form.
Roncaglia is an extraordinary custodian of pomological biodiversity: by growing over 60 apple varieties (an impressive number that includes modern commercial varieties, nearly extinct local Piedmontese heirlooms, rare international varieties that have been recovered, and specialty varieties such as red-fleshed apples) on 40 organic hectares in Bricherasio, the company preserves an invaluable genetic heritage that would otherwise be lost forever due to varietal extinction caused by industrial agricultural standardization. By producing juices 100% from these rare varieties, Roncaglia not only commercially enhances fruit that would otherwise be unsellable fresh (heirloom varieties often have imperfect appearance, irregular dimensions, and a short shelf life) but also allows consumers to experience flavors, colors, aromas, and nutritional properties completely unlike standardized products. Each bottle is a testament to a passion for biodiversity, a commitment to sustainable organic agriculture, and a vision that prioritizes quality and uniqueness over quantity and uniformity.
100% red flesh apples.
Extremely rich in anthocyanins (2-3 times higher than common apples), high total polyphenol content (quercetin, chlorogenic acid, catechins), vitamin C, soluble pectins, and potassium. No added sugars, preservatives, or colorings (the red color comes naturally from anthocyanins).
The intense pink-red color comes EXCLUSIVELY from the anthocyanins naturally present in red-fleshed apples. NO added colorants. The intensity may vary between batches depending on the prevailing variety and ripeness.
The flavor profile is significantly different from regular apple juices: more intensely aromatic with notes of red fruits (raspberry, strawberry, currant), a pleasantly light tannic astringency (similar to black tea or young red wine), and a more persistent finish. If you're looking for the neutral sweetness of regular apples, this juice offers a more complex experience.
Color (from pale pink to deep red), flavor (more/less tannic, more/less sweet), and aroma vary naturally between batches depending on the varietal mix, season, and ripeness. A testament to artisanal authenticity.
A possible red-brown sediment on the bottom is normal (precipitated anthocyanins, pectins, very fine pulp). Shake well before use. This is a sign of quality and non-alteration.
Thanks to its extremely high anthocyanin content, this juice can almost be considered a "natural antioxidant supplement." Scientific studies link regular consumption of anthocyanins to reduced cardiovascular risk, improved cognitive function, and protection from oxidative stress.
This is a rare product that's hard to find. Most farms don't grow red-fleshed apples (considered "anti-commercial"), and very few produce dedicated juice. It's a unique experience of reclaimed biodiversity.
