Organic Beef Split

Selection of the best certified organic and biodynamic farms in Lazio. Variable cattle breed.

The heart of tradition, ready to simmer slowly for a rich and enveloping flavour.

Organic Beef Split: Authenticity and Artisanal Flavor

Organic Beef Stew is a classic of Italian cuisine, a cut that evokes warmth, family, and authentic flavors. It comes exclusively from adult cattle raised on the finest farms in Lazio, all rigorously certified organic and biodynamic. This commitment guarantees a short, ethical supply chain, where the animals graze freely, fed healthy fodder, without a trace of antibiotics or GMOs.

We've chosen mature beef because it's more mature, flavorful, and rich in character, ideal for cooking that requires time and patience. The "variable breed" label is a source of pride for us: it represents the biodiversity of our farms and our rejection of standardization, in favor of a quality you can taste.

This broken piece of beef, already portioned into ready-to-use cubes, strikes the perfect balance between lean meat and a light touch of connective tissue, which, slowly melting during cooking, will lend your dishes unparalleled creaminess and tenderness. Vacuum-packed, it arrives at your doorstep preserving all its freshness.

The roots of this Organic Beef Stew are deep in tradition

Stew is the quintessential Sunday dish, a recipe that unites Italy from north to south. It's the epitome of slow, patient cuisine, where time is the secret ingredient that transforms simple cuts into flavorful masterpieces. It's a carefully prepared dish, requiring meticulously prepared sautéed vegetables and hours of slow simmering, during which the house fills with an unmistakable aroma.

Using our organic beef stew means rediscovering that authentic flavor. It's the meat our grandmothers used, raised healthily and naturally, capable of making a rich sauce and flavorful broth. It's a tribute to the cuisine of the past, made with genuine ingredients and respect for the raw material.

Choosing Organic Beef Split means taking care of yourself

Contrary to popular belief, slow-cooked beef is a food packed with health benefits. During the long cooking process, the collagen in the connective tissue dissolves, turning into an easily digestible gelatin. This meat is an extraordinary source of high-quality proteins, essential for muscle growth, and heme iron, essential for energy.

Organic and biodynamic certification ensures a clean product, free from any chemical, antibiotic, or hormone residues. It's deeply nourishing, healthy, and authentic, perfect for the whole family, from adults to children.

  • WHITE STEW WITH POTATOES AND ROSEMARY A more delicate but equally flavorful version. After the white sauce, brown the meat and deglaze with white wine. Add vegetable stock and, halfway through cooking, stir in the Organic New Potatoes cut into small pieces and a sprig of Fresh RosemaryLet it cook until the meat is very tender and the potatoes are creamy.
