What is Saba?

Saba or cooked must is obtained from the freshly prepared must of white or red grapes; it is also known as "cooked must", "cooked wine" or "grape honey".

The must is poured into a copper pot together with some whole walnuts which, turning over in the slow boil, help the must not to stick to the bottom of the container.

The saba is ready when it is reduced to a third of its initial quantity.

It is very sweet and keeps well thanks to the sugar content.

How to use Saba

When cane or beet sugar was unknown or very expensive.

It was used both for homemade desserts and to give more flavor to poor dishes such as polenta or to dip piadina or the fried dumpling.

This ancient preparation is still part of the local gastronomic tradition of different regions - Emilia-Romagna, Marches but also Puglia, Sardinia and Campania

 

 

Property of Saba

Wanting to interpret some passages of the Bible, it seems that the saba was even known by Moses who used it to treat some ailments.

What is certain and not passable of interpretations is that this syrup boasts precious therapeutic properties.

Recognized as homeopathic treatment against affections of the mouth, calming cough and decongesting small burns.

Relieves annoying heartburn and, dissolved in a little warm milk, is a panacea for sore throat and flu symptoms.

Mixed with hot water and mint piperita gives brightness, freshness and hydration to the skin of the face.

 

 

Using Saba in the kitchen

Saba or cooked must is suitable as an ingredient for many recipes: on fruit, meat, first courses, legumes or polenta.

It is used in confectionery on traditional sweets such as Christmas bread or "Turtei sguasarot" and is the basic ingredient, together with strong vinegar, of the traditional balsamic vinegar of Modena.

It is used as:

  3. In the Granita, with ice from the fridge
  4. On ice creams
  5. In Christmas Bread
  6. In Pastry
  7. For the Turtei Sguarasòt
