Produced in Capaccio-Paestum, on a closed-loop farm where animal welfare is a priority, this ricotta exudes the aromas of the organic fodder the buffalo feed on. It's soft on the palate, with a fresh, persistent lactic flavor, free of harsh acidity. The roots of this Organic Buffalo Ricotta are deep in tradition

Technically, ricotta isn't a cheese, but a valuable dairy product obtained by "re-cooking" (hence the Latin name, recoctus) the whey left over from mozzarella production. In the rural culture of Southern Italy, nothing was wasted: buffalo whey, much richer in fat and protein than cow's whey, was expertly transformed into this nutritious food.
