Pecorino is an ancient cheese, its production likely dating back to the Neolithic, when Mediterranean shepherds discovered that curdled, salted, and matured sheep's milk could be transformed into a preservable, transportable, and highly nutritious food that could sustain families and flocks during transhumance, harsh winters, and famines. The ancient Romans produced and consumed abundantly "caseus pecorinus" (sheep's milk cheese), which was a staple food for legionaries, farmers, and even the noble classes when aged and of high quality.
In Lazio, the tradition of Pecorino Romano DOP—one of the oldest and most famous cheeses in the world, produced for over 2000 years according to rigorous production regulations—testifies to the historical importance of regional sheep cheesemaking.
