Organic Guanciale from Poggio Felicioso is the cured meat every Roman kitchen dreams of: the cheek of pigs born and raised 100% free-range in the Tolfa mountains, salted with pepper and garlic, and patiently cured until it develops the intense aroma and firm texture that distinguishes it from other pancettas. Its secret is the wild-grain fat, derived from animals free-ranging year-round and fed organic grains: in the pan, it melts slowly, becoming crispy on the outside and meltingly soft on the inside, and releases an aroma that no factory farm can replicate. The roots of this pillow are deep in tradition

Guanciale is a product of transhumance: it originated in the saddlebags of shepherds from the central Apennines, who carried this hardy, hearty cured meat between Amatrice, Grisciano, and the mountains of Rieti. It was precisely from those shepherds that gricia was born—guanciale, pecorino cheese, and pasta, nothing more—considered the mother of all Roman pastas. And when tomatoes arrived from the New World, in Amatrice gricia was dressed in red, becoming amatriciana, now a gastronomic treasure of Italy.
