Organic Guanciale from Poggio Felicioso is the cured meat every Roman kitchen dreams of: the cheek of pigs born and raised 100% free-range in the Tolfa mountains, salted with pepper and garlic, and patiently cured until it develops the intense aroma and firm texture that distinguishes it from other pancettas. Its secret is the wild-grain fat, derived from animals free-ranging year-round and fed organic grains: in the pan, it melts slowly, becoming crispy on the outside and meltingly soft on the inside, and releases an aroma that no factory farm can replicate. Free from chemical preservatives or artificial additives, free from antibiotics, and CCPB certified: the ultimate condiment, from Tolfa with love.
Guanciale is a product of transhumance: it originated in the saddlebags of shepherds from the central Apennines, who carried this hardy, hearty cured meat between Amatrice, Grisciano, and the mountains of Rieti. It was precisely from those shepherds that gricia was born—guanciale, pecorino cheese, and pasta, nothing more—considered the mother of all Roman pastas. And when tomatoes arrived from the New World, in Amatrice gricia was dressed in red, becoming amatriciana, now a gastronomic treasure of Italy. Every cube of guanciale sizzling in the pan echoes that ancient gesture of the shepherds on the move: the tastiest story there is.
Guanciale teaches a lesson in balance: its prized fat is so rich in flavor that just a few cubes are enough to season an entire dish, without the need for oil or other added seasonings. In free-range pigs, that fat has a more balanced and aromatic profile, the result of daily exercise and a natural diet based on organic grains. Curing with only salt, pepper, and garlic—without chemical preservatives or artificial additives—and the complete absence of antibiotics in the farm, guaranteed by the CCPB organic certification, make this cured meat a concentration of transparent and honest flavor.
Since 2016, Poggio Felicioso has raised over 300 free-range pigs in the Tolfa mountains, using 80% of their own produce. Their closed supply chain, artisanal pork butchering skills, and CCPB organic certification ensure that their cured meats taste like freedom.
