The Japanese "longevity mushroom" grown in Lazio: brown cap, firm flesh, intense umami
A small oriental excellence at zero kilometer, from the thousand-year-old tradition of Asian cuisine to the signature Italian dish

I Fresh Shiitake Mushrooms are a small, surprising achievement of contemporary Italian agriculture: the famous oriental mushroom (Lentinula edodes) grown directly in Lazio, on natural substrates made from fine woods (chestnut, oak)—the same production tradition as ancient Japanese log farms. They are clearly different from imported shiitakes: brown-brown hat with a velvety surface, diameter 4-10 cm, dense white lamellae, firm and fleshy meat with a characteristic flavour earthy, intense and rich in umami. The Italian short supply chain It eliminates refrigerated transport over very long distances and allows you to enjoy the mushroom at its freshest, with all its aromatic complexity preserved. Versatile in the kitchen, from the most traditional Asian preparations to signature Italian dishes, shiitake is the gourmet mushroom par excellence of the contemporary era.
Lo shiitake It is one of the oldest and most venerated mushrooms in Eastern tradition: its documented cultivation dates back to Song Dynasty China (960-1279 dC), where the farmer Wu San Kwung he developed a technique called “dáxíng” — the “battitura” — which consisted of incising chestnut trunks to encourage fungi. The word itself “shiitake” It is Japanese: composed of “shii” — a type of oriental chestnut (castanopsis cuspidata) traditional growing substrate — and "Take" — mushroom. In Eastern cultures it is considered the “longevity mushroom” and has been part of both the daily cooking both of the Traditional Chinese Medicine: I'Honzo-Komoku, a 14th century Chinese treatise, already described it as a tonic, capable of accelerating circulation and giving energy. Its introduction in West It is relatively recent - 70s-80s - but in a few decades it has become a global superfood recognized for its nutraceutical properties. Contemporary Italian cultivation, including in Lazio, is a small, surprising niche supply chain which drastically reduces the environmental impact and brings mushrooms of the highest organoleptic quality to the table.
Shiitakes are universally considered one of the most nutraceutically active mushrooms existing in nature. They contain the lentinian, a shiitake-specific beta-glucan with documented action immunomodulatoryJapanese and Chinese studies have highlighted its role as an adjuvant in oncology protocols as a stimulant of NK (Natural Killer) cells of the immune system. They also provide eritadenine — specific compound capable of reduce cholesterol blood — and ergothioneine, a rare and particularly powerful antioxidant. They are a natural source of vitamin D2 (especially if briefly exposed to the sun before consumption), B vitamins (riboflavin, niacin, B6), selenium, Copper, Zinc, Manganese, dietary fibers (including prebiotic beta-glucans) and vegetable proteins of good quality. They are also very rich in umami compounds (glutamic acid and guanylate) — the fifth basic taste — which makes them an exceptional natural flavoring, particularly valuable in vegetarian and vegan cuisine as an alternative to the intense flavor of meat. Naturally vegans, gluten free, very low calorie.
