This extra jam is a subtle poetic statement: on one hand, organic Italian wild plums, small and intense, with that deep, tart note that their cultivated cousins have lost along the way; on the other, a refined and meticulously balanced flavoring—1% organic rosemary, just enough to let its balsamic essence emerge in the finish without ever overpowering the fruit. The "extra" designation certifies the generosity of the recipe: a full 106,6 grams of fruit per 100 grams of finished product, concentrated during cooking, with only organic cane sugar topping it off. The result is a mature and elegant jam, perfect for breakfast but at its best where ordinary jams don't dare: alongside cheeses and in savory dishes.
There was a time when hedgerows were the wild larder of the countryside: along the edges of the fields, between brambles and hawthorns, wild plum trees grew—planted by no one, harvested by everyone—and in late summer, peasant families would stock up on them for winter preserves, transforming into sweetness what the earth gave freely. It was the poor art of wild fruits, now almost lost along with the hedgerows themselves. Rosemary, for its part, bears the sea in its name—ros marinus, "dew of the sea"—and has always been the Mediterranean herb that the most daring chefs have dared to pair with desserts, from sugared Tuscan focaccias to flavored honey. This jam reconnects the two threads: the fruit of the hedgerow and the herb of the sun, as in a peasant pantry that had read books on haute cuisine.
Wild fruits are tiny concentrates: growing without irrigation or forcing, wild plums develop a density of flavor and compounds—anthocyanins and polyphenols from the dark skin on the top—that cultivated fruits dilute with water and size. The recipe is simple and transparent: only fruit, organic cane sugar, and rosemary, with no added pectins, preservatives, or synthetic flavorings, with 172 kcal per 100 grams—and a teaspoon weighs much less. Rosemary adds its essential oils, traditionally used as a balsamic and digestive aid. A conscious sweetness, to be dosed with a teaspoon and enjoyed without a care in the world.
