Very sweet, not very spicy, and very tasty
The producers of the presidium cultivate around 6 hectares of onions.
The fields are located in the municipality of Breme, in the province of Pavia,
in a puddle area with medium-textured sandy soils of floodplain origin,
particularly suitable for this cultivation which has ancient origins
with first records found in a chronicle of 906 AD

It is a high quality onion variety that is grown in the areas of Lombardy and Piedmont.
1. Unique taste: the Breme Red Onion has a strong and persistent flavour, characterized by spicy notes, which make it perfect for enriching dishes with an extra touch of flavour.
2. Rich in beneficial properties: the Breme Red Onion is a food rich in beneficial properties for the body. In fact, it contains antioxidant substances, vitamins and minerals that help maintain health.
3. Artisanal and high quality product: the cultivation of the Red Onion of Breme still takes place in the traditional way, without the use of pesticides or chemical products. This makes the final product an artisanal food of high quality and with an authentic flavour.
The presidia are Slow Food projects that protect small quality productions to be safeguarded, made according to traditional practices
The Breme red onion is the ideal ingredient for jams, compotes and mustards and sweet and sour.
In cooking, it is excellent both raw, for example in the Bremese salad (with tuna, beans, extra virgin olive oil, salt and vinegar), and cooked and transformed into soups and omelettes.
At the beginning of the 900s Breme was nicknamed "the vegetable garden of Lomellina": a large part of the population of this area was in fact essentially dedicated to the cultivation of vegetables.
After World War II, rice production took over and onion cultivation was also partially abandoned.
The "sweet", however, survived and in 1982 the Bremese sports club, with the patronage of the Municipality, organized the first edition of the onion festival.
Since 2006, the municipal administration has supported the work for the protection and promotion of the red onion, encouraging the creation of a producers' association, initiating collaboration with Slow Food and attributing the De.Co. (Municipal Designation of Origin).
In 2014, thanks also to the University of Pavia and the Lombardy Region, the Breme red onion was registered in the national register of horticultural varieties for conservation (the first horticultural variety in Lombardy).
Slow Food has included this onion on the Ark of Taste and in 2020
