The key characteristic of this cuvée is its layered complexity: a harmonious blend of grains, fresh fruit, and wood, the fruit of patient patience and a profound respect for the rhythms of nature.
On the palate, the Nontrebbio Cuvée 21/24 is dynamic and elegant. Despite its 7,4% ABV, the drinkability remains agile and smooth, typical of Cantina Errante's style, yet each sip adds a new layer. The vinous notes complement the acidic punch and structure provided by the oak aging, offering a profile that is simultaneously deep and fresh, intense, and incredibly drinkable.
Brewed with locally sourced ingredients and certified organic, this beer uses no selected yeasts or artificial flavors. It's a living product, evolving in the glass, telling the story of a region and a creative process that treats the brewery not as a machine, but as a living organism in constant exchange with its surroundings.
This beer's production process lasts over four years and is rooted in the 2021 and 2024 Tuscan harvests. It is based on three historic local grape varieties: Trebbiano, Malvasia, and Vernaccia. The process begins in 2021 with co-fermentation initiated by the natural yeasts present on the grapes, followed by slow maturation in barriques that have held great Tuscan wines. In 2024, the blend was enriched by maceration of fresh Trebbiano and Vernaccia skins in beers made using the coolship and perpetual methods.
This technique, similar to the solera system, allows for the maintenance of a vibrant population of yeasts and local microflora, creating an unbreakable bond with the terroir of Barberino Tavarnelle. Nontrebbio Cuvée 21/24 is more than just a beer, but a legacy of Cantina Errante's exploration, a journey that unites the rural wisdom of the vineyards with the purest brewing experimentation.

Wandering Cellar is the experimental project of the San Gimignano Brewery, where beer is treated as a living organism. Using only spontaneous fermentations, barrels from local wineries (Bolgheri, Chianti, Montalcino), and fresh fruit from heirloom varieties, Stefano Botto and his team explore the interaction between the brewery and its surroundings, creating liquid imprints of a biodiversity journey.
