Round, deep and intoxicating: the red from a vineyard with more than sixty years of history to tell.

Bifaro Rosso is born from a rare heritage: an ancient vineyard planted in 1960 and trained as a bush vine, where, according to rural tradition, multiple varietals coexist—Magliocco and Guarnaccino leading the way, along with the historic Greco Nero and Malvasia Bianca. The grapes are hand-picked and then pressed, remaining in contact with the skins for three days; fermentation occurs spontaneously, without any chemical treatment, and aging in concrete preserves the purity of the fruit. This blend of varietals from the same vineyard offers extraordinary emotions: a wine with an intoxicating drinkability, rounded and profound—a red without compromise.
The alberello (bush-trained) is the oldest and most poetic form of the Mediterranean vine: the low, free-standing plant, cup-pruned like a small tree, which southern farmers have cultivated for millennia to withstand wind, sun, and thirst. And our grandparents' vineyards held another wisdom: the mixed plot, where different varieties grew side by side in the same row—a safeguard against difficult years and, at the same time, a recipe for complexity that no modern blend can replicate. The 1960 vineyard from which Bifaro is born is all of this: a living archive of rural Calabria, told in the glass with each harvest.
Visual examination: deep and impenetrable red, with purple reflections that tell of the youth of the fruit.
Olfactory examination: aromas of pulpy and ripe fruit, sweet and juicy, crossed by mineral and iodine sensations.
Taste test: an intoxicating, round and deep drink, with mineral and salty returns that lengthen the sip: a wine without compromise.
Technical data: Magliocco and Guarnaccino grapes from a 1960 bush-trained vineyard; alcohol content 13,5% vol; hand-harvested and pressed; 3-day maceration on the skins; spontaneous fermentation without chemical treatments; aged in cement; production of 4800 bottles.
Pairing suggestions: Spicy dishes, absolutely—from pasta all'arrabbiata to Calabrian cured meats with chili peppers; also excellent with grilled and chargrilled meats, eggplant parmigiana, and medium-aged cheeses.
Founded in 2015 in the Crati Hills from the friendship between Daniela De Marco, Giampiero Ventura, the singer-songwriter Brunori Sas and Emilio Di Cianni, Le Quattro Volte creates natural wines from native Calabrian vines: spontaneous fermentations, no filtration and sulfur always below 30 mg/l.
