Each jar holds centuries of Maremma gastronomic history, reinterpreted with artisanal respect and organic certification. Its origins are lost in the dark ages when transhumant shepherds, mounted cowboys, solitary woodcutters, and charcoal burners lived for weeks at a time in the woods and had to make do with very little: crystal-clear spring water, wild vegetables gathered in uncultivated meadows (wild chicory, fragrant borage, aromatic mint), a few onions and tomatoes brought from the nearest village, bread now hard as stone, and the inevitable flask of olive oil that every Tuscan considered as precious as gold.
The name "acqua cotta" (cooked water) derives from the almost Zen-like simplicity of its ancestral preparation: water was boiled in a blackened copper pot hung over a crackling wood fire, vegetables available that day were thrown in, seasoned with generous amounts of olive oil and coarse sea salt, and poured while still steaming hot over slices of stale bread arranged in chipped terracotta bowls. On good days, it could be enriched with an egg beaten into the boiling broth or a piece of Colonnata lard for added substance.
