There are paths that seem to go far, but instead lead back exactly to the starting point. After gaining significant experience in baking and pizza in just a few years, Giacomo Carlizza chose his hometown—Tuscolano—to realize his vision of baking and bread. Zampa Forno Etico was born this way, a return to his roots: not a place that could be opened anywhere, but a bakery designed for a specific neighborhood, for the people who live there and the rhythm of their days.

The architectural choice speaks volumes about the philosophy of this place: the shop and workshop coexist in the same space, with no barriers or walls separating those kneading dough from those buying it. The mixer and oven are always in action, visible to all, highlighting the artisanal process and the meticulous attention to natural leavening times. The space is small but tidy and clean, with every detail designed to showcase the bread, pizza, and other items for sale; outside, a small space for breakfast, lunch, or a snack. It's a neighborhood workshop in the truest sense of the word—one where small-scale farming activities blend with the hustle and bustle of the city.

At the heart of it all is a very clear idea of bread. Carlizza's is a home-made, family-style bread: large loaves, balanced flavor, locally sourced flours, and the ability to last all week without losing quality—just like bread used to be, when it was baked for days, not hours. Sourdough is used exclusively, and the natural leavening dictates the baking time, not the other way around. This results in different types of bread, each with its own character, and a scent that permeates the shop and wafts from the street.

The excellence of its production—due to the exclusive use of sourdough starter, selected flours, and excellent ingredients for toppings and fillings—has quickly won the hearts of local customers. But not only that: some of the city's best restaurants also rely on this bakery to supply their kitchens, an accolade that for a neighborhood bakery is worth more than any brand.
