The passion for the cultivation of Nubia Red Garlic has been handed down from generation to generation by the producers Rosalba, Gianni, Nino, Gino and the two Vitos which, following the Slow Food principle, are committed to preserving the typical product of the area.

Thanks to the care dedicated to the selection and manual cultivation, the Red Garlic of Nubia has a unique flavor and aroma, due to the very high content of allicin, a substance that characterizes it.

To protect and enhance this ancient cultivar, the Rossonubia Cooperative was founded in 2009, adhering to the Slow Food Presidia, which protect small production through traditional practices.

In recent decades, due to the exodus from agriculture and other factors, the Red Garlic of Nubia was in danger of disappearing but thanks to the commitment of the producers of the Presidium and other enthusiasts, a protection network has been created which also aims to obtain the Protected Designation of Origin.
