Innocenti Renzo is an active company since 1957 that Stefano Innocenti and his wife Paola (in the photo) carry on with passion, taking care of the more than 100 Massa sheep on their farm. 

In addition to pecorino and raw milk, they produce ravaggiolo and ricotta.

Il pecorino from the Pistoia Mountains is a Slow presidium Food and is produced according to very strict production specifications which prohibit any selected additive or ferment.

In fact, only self-produced ferments are used for cheesemaking: starter milk, whey starter or starter cheese.
