SlowFood® Organic Trasimeno Green Bean

Slow Food Presidium, Castiglione del Lago (PG), Umbria

The seed is as small as a grain of rice

Ideal to eat cold in salads or cooked in soups

Always cultivated on the land around Lake Trasimeno and widespread until the XNUMXs, afterwards the bean almost disappeared

Small Farmers of Legumes

It is a very small reality: the structure of the farms is of a family type and the employees do not exceed three units, producing a total of eight to nine quintals of beans. The Presidium is working to make this product known, allowing it to exit the local market (today the sale is mostly direct) and thus stimulating a small increase in production.
The small producers who still sow and manually harvest this polychromatic bean have come together in an association and have adopted a specification that distinguishes the production of the Presidium.

Production area Municipalities around Lake Trasimeno (province of Perugia).

Presidium supported by: Comunità Montana Trasimeno-Medio Tevere Municipalities Association, Umbria Region

The beans Characteristics

The Fagiolina is a very rustic and pest resistant plant that is sown in spring.

It does not have great needs from the point of view of cultivation, but the difficulties come at the time of harvest, as the flowering and subsequent maturation of the pods takes place in a gradual manner, the latter long and laborious operation begins at the end of July and lasts until September.

The pods collected, no more than 12-15 centimeters long, are spread out in the open air to finish drying and then beaten to release the seed.

At this point the seed is screened, packaged and labeled.

The cultivation of Fagiolina is a very small production reality.

Flavor of the Bean

Who will have the good fortune of having a bag of Trasimeno beans in your hands you will be able to experience a very particular taste that is distinguished by a characteristic delicacy, tending to sweet, with pronounced herbaceous hints; the skin is thin and completely leathery, making it particularly pleasant on the palate.

The modest size of the seed makes the preparation phases simple and quick (it is not necessary to leave it in water before cooking); in fact, it will be enough to rinse it and boil it in plenty of water for about 45-50 minutes and the result will be a soft, delicate but at the same time very tasty legume.

Nutritional Characteristics Fagiolina

Nutritional analyzes show that trasimeno beans have higher protein contents than beans, from 5% to 15% more.

Furthermore, the lipid content is also significantly higher and this fact is very important as the modest lipid fraction of legumes actually contains most of the molecules with functional activity.

The fiber content is also higher than other beans (from “30% to 50% more) and even more interesting is the soluble dietary fiber content, up to 200% higher than that of other beans.

These results therefore show an excellent level of nutritional quality for the Trasimeno bean.

PODERE MARELLA

Podere Marella

Podere Marella was born from the tenacity and foresight of Fiammetta Inga, mother of the current owner.

An extraordinary and visionary person, she was among the first women to undertake the activity of viticulturist, among the first to adopt the organic approach in viticulture and vinification, dedicating herself to the production of organic wines since 1974 and among the first to open up to adopt the formula of the farmhouse in the 80s.

Podere Marella is located in a central position on the border between Tuscany and Umbria, near Lake Trasimeno and at the intersection of two major roads that unite the North and South of Italy on one side and Siena and Perugia on the other.

Tourist agri

The property is surrounded by a wood of centuries-old oaks which, however, does not prevent the eye from wandering as far as the eye can see over vineyards, olive trees and cultivated fields. The wine area is that of the DOC Trasimeno, a still little known denomination which, however, has nothing to envy to the neighboring and more famous DOC Montepulciano and Cortona.

The farmhouse, whose main body dates back to the 700s, has been converted into a country residence with discreet luxury.
