Typical cut salami obtained from the fine-grained grinding of fine parts of the pig: thigh, shoulder, bacon, carefully selected and denervated.

It takes its name from the natural stuffing casing called “coral”. Seasoned making the most of the wonderful climatic conditions of the natural habitat.

BREEDING:

In this breeding no antibiotic treatments are made, tail docking is not carried out and a different philosophy is adopted also with regard to the castration of males, which is preferred to avoid in order not to weaken the male pigs, which living in the wild and exposed to predators (wolves and foxes), must be able to better resist bad weather and defend themselves and the pack from any attacks.

 

MALE PIGS:

They are generally castrated when they are very young to avoid an unpleasant smell that the meat would take on in reproductive age, to avoid this problem and castration in this breeding the males are slaughtered a little earlier, around 6-8 months (therefore before sexual maturity) , Giuseppe also assures us that both for the breed and for the wild life, the smell would not be very intense anyway.
