Gambuzza Italian Sesame

 

In the kitchen:

  • Marinades: It can be used to marinate meat, fish or tofu, imparting a unique, spicy flavour.

  • Frying: Sesame oil has a high smoke point, so it can be used for frying at high temperatures.

History of Ispica Sesame, why it is so valuable

Ispica, today known for the intensive production of first fruits, preserves an ancient agricultural tradition linked to sesame, introduced into Sicily during the Arab domination. The local variety, selected two centuries ago, is distinguished by its small, amber seeds and intense flavour.

Once upon a time, sesame cultivation was widespread in the area, favored by marshy soils that offered ideal humidity for sowing. However, production has decreased dramatically due to laborious manual harvesting and competition from imported product.

 

The cultivation of Ispica sesame

It follows an annual cycle, with sowing between April and May and harvesting between August and September. The plants, about 150 cm tall, produce numerous capsules containing up to 70 seeds each.

The harvest, a crucial moment, It is done manually to avoid dispersing the seeds.

Ispica sesame is a fundamental ingredient in Sicilian cuisine, used in breads, biscuits and other dishes. In particular, it is the main ingredient of cobaita (or giuggiulena), a typical dessert based on honey, sugar and sesame.

 

 

Harvesting and processing

The sesame harvest begins in mid-September. The plants, which reach approximately 2 meters in height, are harvested by hand and arranged in sheaves for natural drying.

The extraction of the seeds takes place by beating on sheets, followed by careful cleaning with special sieves. This artisanal process guarantees a high quality final product, ready to be consumed.
