Organic pearl spelled produced and packaged in Val d'Orcia by the Mulino Val d'Orcia company.
Spelled is the least caloric cereal and thanks to its high protein content (equal to 15%), combined with legumes, it is suitable for delicious and not too caloric single dishes.
It is also rich in fiber, useful for slowing down hunger and regulating intestinal transit.
Spelled is a “dressed” cereal and with the pearling, the outer layers of the bark are eliminated and consequently cooking times are reduced, but no fundamental nutritional principle is eliminated.
The Triticum monococcum commonly referred to as small spelled and more commonly known as "monococcus”(Einkorn in German), is a plant of the grass family and is considered the first cereal" domesticated "by man around 7500 BC, in the Middle East.
It is the refined cereal, that is without bran and germ. It keeps only the innermost part, so it is mostly made up of starches without the fibers of the outermost parts.
It comes in elongated and curved grains of a light amber brown color, stripped of the chaff. On the palate it is consistent and dry.
It differs from the integral one only for a slight scratching (grinding) of the surface of the caryopsis which remains whole. It is clearer than whole spelled and softer on the palate. Therefore it is the most suitable for farro soups and salads.
With the pearling the external layers of the bark are eliminated and consequently the cooking times decrease, but no fundamental nutritional principle is eliminated.
It keeps the glumetta intact, which is instead eliminated in the pearl spelled, which is much lighter in color and cooks in a much shorter time. The pearled one is less refined and contains a higher percentage of fibers.
It is obtained from wholemeal spelled grains, i.e. simply stripped of the chaff by breaking each grain into several parts (3 or 4 parts) and subsequently sieved into the gauge through a sieving machine. Visually it has an amber light brown color.
