From the pristine heights of the Pflegerhof farm in Sant'Osvaldo comes Organic Dried Hyssop (Hyssopus officinalis), an aromatic plant of great character and ancient nobility. Cultivated according to the rigorous dictates of Alpine organic farming, this hyssop boasts a complex aromatic profile: its top notes are fresh and camphorated, similar to mint, while the body reveals warm, slightly bitter, and spicy nuances reminiscent of sage and rosemary.

The roots of this plant are deep in tradition

Hyssop is one of the most cited plants in ancient history and sacred texts ("Purify me with hyssop and I will be clean," say the Psalms), symbolizing physical and spiritual purification. Medieval monks cultivated it in their gardens to make digestive liqueurs and cough syrups. In traditional South Tyrolean cuisine, hyssop is used sparingly but expertly to lighten fatty meat dishes and to flavor winter soups, thanks to its ability to stimulate gastric juices.
