Artisan Cured Meat from Italian Pigs

Salame Corallina Suino Nero di Ammano is an artisanal cured meat that celebrates the art of Italian pork butchering, combining it with the highest standards of animal welfare and environmental sustainability. This salami takes its name from its distinctive thin, elongated shape, reminiscent of a branch of coral. It is produced exclusively from organic pigs born, raised, and slaughtered in Italy, fed certified organic feed free of GMOs, preventive antibiotics, and growth promoters, and raised in respectful farming conditions that ensure adequate space, outdoor access, and optimal physical and mental well-being.
The production follows traditional artisanal methods passed down through the De Angelis family: the finest pork cuts (shoulder and pancetta) are carefully selected, trimmed, minced to a medium grain, mixed with sea salt and a secret blend of natural spices (black pepper, garlic, and wine), stuffed into natural casings, hand-tied, and slowly aged in a naturally ventilated cellar. During weeks of patient maturation, the salami develops its characteristic white crust of beneficial noble mold, loses moisture, concentrating flavors, and acquires that firm but not tough consistency, that intense yet clean aroma, and that full, rounded flavor with delicate spicy notes that distinguish artisanal cured meats from industrial ones.
When cut, the slice reveals a uniform pinkish texture dotted with evenly distributed pure white fat, a sign of quality meat and proper processing. The flavor is balanced: the natural sweetness of organic pork, a moderate savoriness that doesn't overpower but enhances, harmonious spicy notes that complement without overpowering, and a clean finish without any unpleasant aftertaste or excessive thirst typical of overly salted or additive-laden processed cured meats. The texture is soft to the bite yet firm, gradually melting in the mouth and releasing layered aromas.
The art of pork processing in Italy has ancient origins, documented as far back as the Etruscan and Roman eras, when fermented and cured meats were already being produced. The term "norcino" derives from Norcia, a town in Umbria that became synonymous with excellence in pork processing in the Middle Ages, so much so that Norcia's master curers emigrated throughout Italy, bringing their art. The tradition of pork was central to rural culture: every rural family raised one or more pigs, which were slaughtered in the winter during the "pig festival," a social event that involved the entire community and allowed every part of the animal to be transformed into cured meats, sausages, lard, and other products that would feed the family year-round.
Corallina salami, with its thin shape and relatively rapid maturation, was traditionally the first cured meat to be consumed after processing, while larger salamis and hams required months of maturation.
Pork from free-range animals fed organic grains and free of preventive antibiotics has a superior nutritional profile: higher content of omega-3 fatty acids, fat-soluble vitamins, and no residues of veterinary drugs, hormones, or unwanted substances. Salami provides high-quality protein, easily absorbed heme iron, B vitamins (especially B12), zinc, and selenium. The fats, although saturated, also include beneficial monounsaturated oleic acid.
The absence of added nitrites and nitrates (synthetic preservatives used in the industry) makes this salami more natural, although the curing process should be consumed in moderation, like all cured meats. Choosing organic means supporting ethical farms, transparent supply chains, and artisanal producers.
