La BeeO Baita's Organic Acacia Honey is one of the most prized products from the verdant hills of Mugello. It is perhaps the most prized, sought-after, and sought-after honey of all, a symbol of delicacy and elegance. Characterized by a rather fluctuating production pattern, it provides abundant harvests alternating with low or no production, which increases its value and rarity. Produced by bees managed with the utmost respect for the hive's natural rhythms, it is clear, very light in color, and has a very low tendency to crystallize, remaining liquid for a long time. Certified organic, it is the authentic expression of attentive beekeeping, guardians of bees and biodiversity, immersed in the pristine nature of the Tuscan valley.
Honey is the oldest sweet food known to man, collected and celebrated by all civilizations since prehistoric times, as evidenced by cave paintings depicting the first honey gatherers. Considered by ancient people a divine gift, nectar of the gods, and a symbol of immortality, honey has accompanied human history as a food, medicine, and sacred offering. Acacia honey, in particular, is among the most beloved for its extraordinary delicacy and ability to remain liquid over time. Its production requires great expertise, as the black locust tree's flowering period is brief and temperamental. BeeO Baita preserves this noble beekeeping tradition with dedication, bringing to the table a honey that evokes the flowers and rhythms of the Mugello region.
Acacia honey is also highly prized for its qualities. Thanks to its high fructose content compared to glucose, it has a lower glycemic index than other honeys and a superior sweetening power, allowing for smaller quantities. It is traditionally known for its emollient and soothing properties on the respiratory tract and its gentle intestinal regulating action. Being highly digestible and mild in flavor, it is ideal for even the most sensitive palates. It also provides small amounts of enzymes, antioxidants, and minerals. As raw and organic honey, it retains all its natural properties intact, unaltered by heat treatments. Consumed in moderation, it is a valid and genuine alternative to refined sugar.
BeeO Baita is a small organic farm in Dicomano, in the heart of the Tuscan Mugello, founded by Alice and Simone, who like to call themselves "bee and biodiversity custodians." They manage their hives with the utmost respect for the hive's natural rhythms, producing top-quality honey while maintaining sustainability and environmental protection.

Odor intensity: of weak intensity.
Smell: It lacks strong odors, generally predominantly of a fruity type, but the typical warm and fine connotation (vanilla) that characterizes it at the retronasal odor level (aroma) can also be perceived by the nose.
Aroma intensity: of weak intensity.
Aroma: warm, fine honey (vanilla, wax); as with all delicate honeys, traces of other botanicals may significantly alter its profile; among the essences that can most frequently alter the organoleptic profile of acacia honey are rapeseed and other brassicas, dandelion, heather, and tree of heaven.
Flavor: very sweet, acid not perceived or light, bitterness not perceptible.
Persistence: short.
Other: A burning or irritating sensation on the tongue or throat is often described; it may be attributed to the high osmotic pressure of liquid honey, which tends to dehydrate the mucous membranes.
