They are the fruit of a tropical vine, harvested when ripe and then soaked to remove the red outer layer. The peppercorns are then bleached in the sun, creating the characteristic white pepper. The Malabar region of southern India is the historic birthplace of pepper. With a delicate and aromatic flavor, milder than black pepper, they are ideal for flavoring white sauces, creams, and poultry without visually interfering with light-colored dishes.
