Artisanally produced by Ammano using only organic raw milk from its own farm, this cheese stands out for its firm yet crumbly texture, which tends to crumble nicely when cut, reminiscent of the typical textures of artisanal Cheddar or Cheshire.
The flavor is an intense journey: the use of raw milk preserves a complex aromatic palette, where notes of melted butter and hay intertwine with a pronounced acidity and a lingering savoriness. It's a cheese with character, evolving with aging, acquiring piquant nuances and an increasingly "chalky" texture.
