Mantonicoz is the bold, macerated version of Mantonico, a native Calabrian grape: a true "orange wine" with extraordinary personality. Twelve days of maceration on the skins, a year in large barrels, and two years in bottle shape its unique, whisky-like character, with woody, tannic, and profoundly gastronomic notes. Spontaneous fermentation using indigenous yeasts and the absence of fining or filtration fully preserve its authenticity. It originates in the hills of San Marco Argentano, from natural farming methods that put the land at the center. A bold, unconventional white wine, the perfect companion to fatty fish, white meats, and fried dishes: the boldest expression of a rural Calabria that dares to be bold.
Maceration of white grapes on the skins is the oldest winemaking technique, giving rise to the first wines in history, produced thousands of years ago in amphorae and then in wood. These "amber" wines, now rediscovered and celebrated as orange wines, revive an ancestral knowledge that yields intense aromas, tannic structure, and an extraordinary ability to pair with food. Mantonico, an ancient Calabrian grape of Greek heritage—its name harks back to the Greek "mantòs," meaning prophetic—lends itself magnificently to this bold interpretation, revealing a profound and unexpected soul. With this wine, L'Acino signs off on a project of rare ambition, where millennia-old memory and contemporary vision merge.
A wine produced through spontaneous fermentation using indigenous yeasts, macerated and unfiltered, represents a conscious choice for a more natural and authentic drinking experience. Spontaneous fermentation and lengthy maceration on the skins preserve and enrich the grape's richness of noble substances: prolonged contact with the skins gives this white wine an unusually high concentration of polyphenols and antioxidants. Consumed in moderation, it is part of the convivial Mediterranean tradition. Choosing a wine made using natural methods also means supporting sustainable and respectful agricultural practices, as well as enhancing the biodiversity of a precious native grape variety.

It has an intense golden color with amber reflections, luminous and of notable consistency, an unmistakable visual signature of the long maceration on the skins and the naturalness of a vinification without clarification or filtration.
The nose is complex and enveloping, with characteristic woody notes and hints reminiscent of whisky, accompanied by ripe and dried yellow fruit, aromatic herbs, candied citrus peel, and spicy notes. A deep and bold bouquet, typical of great macerations.
On the palate, it is structured, tannic, and full of character, with an enveloping flavor and a woody texture created by long aging. The palate is full, bold, and dynamic, with a long, persistent finish and fascinating gastronomic complexity.
A macerated white wine with a strong gastronomic vocation, it pairs perfectly with fatty and flavorful fish, white meats, fried foods, and aged cheeses.
