Fresh Peas Properties

Peas are high-fiber vegetables.

These are essential for regular intestinal transit.

Fresh peas are distinguished from other legumes for the greater amount of water present, in fact their water value is much higher and varies from 72%, up to 80%.

This vegetable is a real mine of folic acid, a vitamin which, as we all know, is very essential in pregnant women for the correct growth of the fetus, to avoid serious malformations such as back bifida and also to prevent cardiovascular diseases.

The vitamins that abound in fresh peas are: vitamin C, iron, potassium, calcium and magnesium.

This is why it is usually eaten frozen or canned where the loss of flavor and vitamins is relevant!

Cooking times

1 minute: blanch if fresh
10 minutes: in the pressure cooker
15 minutes: in boiling water, in a pan or in the wok

 

How can you eat them

- Very fresh, the small grains are eaten in mouthful, with a drizzle of oil and salt. Or in delicious spring salads with radishes, cucumbers and fresh goat cheese.

-Cooked. Peas appreciate just about any culinary combination. They lend themselves to delicious soups with cream, excellent accompaniment to mashed potatoes, they consist of tasty dishes with pasta, pork, smoked or grilled meats, rice, pigeon, poultry or fish ... And, of course, its combination with carrot is more successful!

 

The trick to keeping the pea green color. Soak the peas in a generous amount of ice water immediately after cooking to set the chlorophyll.

 

 

RECIPE IDEA

 

FRENCH PEAS

1,5 kg of shelled peas
20 g of butter
125 g of spring onions
1/4 small lettuce
1 spoon of sugar
salt and pepper
Bouquet du Aromi (thyme, laurel, sage)

 

1- Prepare the vegetables: Peel and wash the onions. Wash the lettuce leaves, then cut them and prepare the bouquet of herbs.
2- In a saucepan, gently fry the chopped onions in the butter, then add the lettuce to melt it.

3- Then add the peas, the bouquet of herbs and sprinkle with sugar. Add a little water (about 1/4 of a litre) and mix.

4- Cover and simmer for another 20 minutes, checking from time to time that there is enough liquid. Salt and pepper at the end… Taste and serve.
