TASTING NOTES

Semi-dry sparkling wine, aged on milk, fine and persistent bubbles, pale yellow color, clear and brilliant, on the nose  it is intense and expressive, with floral scents and aromas of peach and white fruits. On the palate it is wide and round, soft and elegant.

 

WHY WE LIKE IT

It is a Crémant (Sparkling Wine) from Anjou, similar to Champagne.

The denomination "Champagne" in  France can only be used for wines deriving from vines and wines made in the French region of Champagne (North-East of France with the unofficial capital Reims).

All the other French sparkling wines, vinified in regions other than Champagne take the denomination of “Crémant.

 

Crement de Loire

Like Champagne, this Crémant is also aged on lattes (strips).

Aging on strips is a technique that only concerns sparkling wines produced in the French regions of Champagne or in the Loire Valley.

After alcoholic fermentation, the wine is bottled with a small dose of sugar to restart fermentation and produce carbonic gas.

The bottles are stored horizontally on wooden strips for at least one year, so that the "foam setting" process takes place correctly.

This is a very regulated process. The minimum period of refinement on the strips is mandatory for each type of champagne: 12 months minimum; 15 months for non-vintage champagne; 3 years for vintage champagnes.

Some houses don't hesitate to keep their best champagnes for 10, even 15 years.

This is a semi-dry sparkling wine, aged for 18 months on strips, with no added sugar, with the aroma of peach and white fruits. We like its round taste and its texture on the palate. Easy to drink, preferable to champagne.

To be consumed preferably as an aperitif, fruit dessert.

It is a certified organic wine.

 

 

The Anjou and in particular the Côteaux du Layon

A French region renowned for its white and especially rosé wines.

The particular formation of the soil, unique of its kind, composed of ftanite (sedimentary stone), schist, limestone, gravel and sand, allow the vinification of excellent wines, characterized by fruity notes and unique softness, much appreciated in France and throughout the world. .

 

 

MATCHING

Excellent on grills and pizzas and for a summer aperitif. To be served slightly cold.

The first lands of the Domaine Pierre Chauvin à Côteaux du Layon, in the heart of Anjou (France), were purchased in 1859. Since then 5 generations have succeeded.

Today the Domaine extends over 15 hectares.

 

 

Natural and Organic Wine

In the constant concern for respect for the environment, in 2000 the Domaine adhered to the "Terra Vitis" Charter, a French brand that guarantees respect for sustainable environmental agriculture.

In 2005 the whole Domaine was converted toorganic farming (Certified by Bureau Veritas). The first AB certified harvest took place three years later in 2008.

The wine is produced in the most natural way possible, in order to find in the wine all the fruit potential of the grape.

Cèpage present on the Domaine: Chenin (white), Cabernet Franc (red and rosé), Grolleau and Cabernet Sauvignon.
