Artisan cotechino

a typical Italian product born in Emilia Romagna, characterized by a soft consistency and an intense, spicy flavour.

It is prepared with selected pork, fat and spices such as salt, pepper, cloves, cinnamon and nutmeg.

Its processing takes place using artisanal techniques and according to tradition, and is characterized by a long cooking time at low temperature, which gives the meat the right consistency and a unique flavour.

Artisan cotechino is ideal to be enjoyed during the winter period, accompanied by lentils or mashed potatoes.

A quality product that represents the excellence of Italian gastronomy and which is increasingly appreciated even outside national borders.

How is cotechino made?

It is a pork-based sausage, composed mainly of lean meat and pork fat, a filling of pork rind and spices such as cinnamon, cloves and pepper.

To prepare cotechino, the meat is minced and mixed with the other ingredients, then stuffed into natural casings.

The product is cooked in boiling water for a few hours, typically 2-3 hours, until the meat is tender and the filling soft.

Cotechino can be served hot or cold and goes well with lentils, mashed potatoes or other rustic side dishes.
