The love of bubbles has a fascinating history: the Romans sought out the rare, naturally effervescent springs, believed to be miraculous, but it wasn't until the 18th century that sparkling water conquered Europe, when scientists learned how to capture carbon dioxide and infuse it into table water. In Italy, sparkling water quickly became a ritual: the gurgling of the glass filling is one of the most familiar sounds of Italian conviviality, from trattorias to family tables.
