Tender, thornless violet from the Roman tradition
A journey through delicate flavour and crunchiness, where each leaf tells the story of Lazio

The Romanesco artichoke is the emblem of Lazio's horticultural tradition, a thornless violet that captivates with its tenderness and delicate, never overpowering flavor. Grown organically in the countryside surrounding Rome, this artichoke is distinguished by its round, compact shape, its purplish leaves fading to deep green, and its complete lack of hairs. It is the undisputed star of two quintessential Roman recipes: the crispy, golden Jewish-style artichoke, and the Roman-style artichoke, stewed with mint and garlic. Its culinary versatility also makes it perfect for fillings, pasta and risotto sauces, or simply as a refined side dish that enhances any table.
The Roman artichoke has ancient roots: the ancient Romans prized the "cynara," the ancestor of modern varieties, considering it a valuable food with digestive properties. Over the centuries, gardeners in the Roman countryside selected this cultivar, eliminating the thorns and favoring the tenderness of the bracts. The area of Ladispoli, Cerveteri, and the Lazio coast has made this artichoke a symbol of agricultural production that combines respect for the land and rural wisdom. Every spring, when the artichokes reach perfect ripeness, Rome's local markets fill with these vegetal works of art, ready to be transformed into dishes that have shaped the history of Roman cuisine.
The Romanesco artichoke is a natural powerhouse of health: rich in fiber, it promotes digestion and intestinal health. Cynarin, a characteristic of artichokes, stimulates liver function and aids the body's detoxification processes. This vegetable is also a valuable source of antioxidants, vitamin C, iron, and potassium, essential elements for the immune system and maintaining water and salt balance. Its low calorie content makes it ideal for those seeking a healthy, balanced diet, while the presence of inulin makes it particularly suitable for those seeking glycemic control. Eating organic Romanesco artichokes means enjoying a food that combines flavor and health, bringing all the generosity of the Lazio region to the table.

Very fresh and seemingly beautiful. The flavor wasn't bad either, but the stems were so woody I had to throw almost all of them away, and the leaves were so tough that I had to throw away almost half the artichoke to get to the tender ones. Inside, they were full of hairs. They're not even distantly related to the true Romanesco, which are no longer available.
