Rings that deceive the eye: pasta born to blend in with the sea

Thirty-millimeter wide and eighteen-millimeter high rings: calamarata has a shape designed for a single purpose, and its name declares it. This version is made with whole-wheat Senatore Cappelli durum wheat semolina, self-produced in the company's fields in Cerignola, ground thoroughly with the germ, bronze-drawn, and dried very slowly between 32 and 38°C. It has the natural color of whole wheat and a delightful flavor, with ancient and ancestral aromas, persistent and delicate notes of pleasant bitterness, and an underlying savoriness that derives from the wheat's cultivation near the salt pans of Margherita di Savoia. It holds together perfectly when cooked, and its rings remain distinct on the plate without ever collapsing.
Calamarata is perhaps the only pasta shape created to resemble another ingredient. The rings precisely replicate those of sliced squid, and the reason is purely gastronomic: in the Neapolitan dish of the same name, pasta and calamari blend together until they become almost indistinguishable, and the eater discovers only by biting what's on their fork—the elastic consistency of the mollusk or the firmness of the pasta. It's a trompe-l'oeil game that Neapolitan cuisine invented long before anyone called it that, and it reveals a precise idea of eating: pleasure also comes from surprise. In the whole-wheat version made from Cappelli wheat, that game adds a warmer color and a flavor that stands up to the sea rather than disappearing into it.
Furosine indicates the thermal damage suffered by the pasta during drying: the lower the value, the gentler the process and the more intact the nutritional value of the grain. It is the parameter that separates slow, low-temperature drying from rapid, much hotter industrial drying methods.
With 14,4 g of protein and 8,33 g of fiber per 100 g, this pasta offers a balanced nutritional intake. Wheat bran fiber helps accelerate intestinal transit: this effect is achieved with at least 10 g of wheat bran fiber per day. Whole-grain milling with the germ results in a higher content of mono- and polyunsaturated fats compared to saturated fats, which represent just 19% of total fat, and salt is virtually absent, at 0,017 g per 100 g. Paired with fish—its natural ingredient—it creates complete and light dishes, rich in fiber and protein.

Store in a cool, dry place, away from light and heat, resealing the package tightly after opening. Because it contains wheat germ, this pasta is higher in fat than refined semolina pasta. Therefore, it should be consumed by the indicated date and protected from moisture, which would compromise its flavor.
