A Cuccìa is Molino Crisafulli's pearled Margherito durum wheat, the star ingredient in one of Sicily's most beloved desserts. Cuccìa is a typical Sicilian dessert made from boiled wheat, topped with sheep's ricotta cheese or with white or chocolate cream. This dessert is traditionally associated with the feast of Saint Lucia, but can also be prepared for other occasions, as it is a healthy and nutrient-rich food. Pearled wheat does not require soaking and is simply cooked in water: in addition to cuccìa, it is perfect for soups and salads. It is made from the prized Margherito variety, the "twin" of Senatore Cappelli, with a simple and digestible gluten structure and a high protein content. Cuccìa is one of the most historically and symbolically charged desserts in Sicilian tradition, inextricably linked to the feast of Saint Lucy, December 13th. Legend has it that during a severe famine, averted thanks to the saint's intercession with the arrival of a shipload of wheat, the starving people cooked the grains as they were, simply boiled, without even grinding them. Hence the tradition, still alive today, of not eating bread and pasta on Saint Lucy's day, but celebrating with cuccìa, boiled wheat seasoned with sweetness. The same cooked wheat is also the basis of another great classic, Neapolitan pastiera. Boiled whole wheat is an ancient food, a symbol of rebirth and prosperity, which Molino Crisafulli brings to the table with the quality of its organic Margherito.

Compared to modern grains, they are naturally higher in protein and have a simpler, less tenacious gluten network, making the grain lighter and more digestible. Molino Crisafulli is a historic mill in Caltagirone, Sicily, operating since the early 1900s and managed by the Sammartino family. It directly cultivates ancient Sicilian grains and hemp using organic methods and a short supply chain, grinding them with stone and cylinder mills using artisanal methods, a custodian of the milling tradition and the island's precious native grains.
