The Jacobin of L'Acino

Giacobino is L'Acino's great Magliocco, the pinnacle of the company's production, made from a nearly century-old vineyard on clay soil. Its prized yields are transformed through spontaneous fermentation using indigenous yeasts, without fining or filtration, and aged for a full 24 months in 27-hectoliter chestnut barrels, followed by an equal amount of time in bottle before release. As the producer likes to say, "In another part of the world, it would be a 1er Cru." It is grown on the hills of San Marco Argentano, using natural farming methods that put the land at the center. A deep, noble, and long-aging red, it is the finest and most ambitious expression of a rural Calabria capable of greatness.

The roots of this Magliocco are sunk in a centuries-old vineyard

The value of a great wine begins in the vineyard, and the one from which Giacobino comes is a testament to time: nearly a century old, its roots sink deep into the clay soil, drawing on a mineral richness that young vines cannot offer. The old vines, with naturally very low yields, produce grapes of extraordinary concentration and complexity. Aging in chestnut barrels—traditionally a Southern wood, different from the more common oak—is a defining choice that ties the wine to its terroir. Magliocco, an ancient Calabrian grape of Greek heritage, finds its most noble and enduring expression here. With Giacobino, Acino creates a wine destined to defy time, a custodian of ancient wisdom.

Choosing the Jacobin means taking care of yourself

A wine produced through spontaneous fermentation using indigenous yeasts, without fining or filtration, represents a conscious choice for a more natural and authentic drinking experience. The absence of invasive interventions preserves the integrity of the product and its original characteristics. Magliocco from old vineyards and very low yields is particularly rich in polyphenols, anthocyanins, and noble tannins, compounds with recognized antioxidant properties. Long aging rounds out and integrates its structure. Consumed in moderation, this structured red wine is part of the convivial Mediterranean tradition. Choosing a wine made using natural methods also means supporting sustainable agricultural practices and enhancing a precious viticultural heritage.

How to Best Use: Giacobino Magliocco

  • WITH LARGE MEATS AND BRAISED STEWS — Its structure and noble tannins call for important and long-cooked dishes. Serve it with a Biodynamic stew stewed or with a biodynamic veal fillet for a high-end gastronomic experience.
  • WITH NOBLE AND TRUFFLED CHEESES — Its complexity goes well with cheeses of character and great personality. Pecorino Aged Under Marc and Goat's Cheese with Truffles enhance its depth and texture.
  • MEDITATION WINE WITH DARK CHOCOLATE —Savour slowly to appreciate all its evolutionary nuances. Pair it neat or with a small glass of the refined India 70% Organic Dark Chocolate, for a finale of rare intensity and nobility.
