The Chatter Puglia Bianco PGI by Cantina Giara

Cicaleccio Puglia Bianco PGI is an orange wine made from 100% Fiano and Falanghina grapes, grown in the Lama Baronale area of Adelfia, Puglia. This natural wine macerates on its skins for five to six days, is unfiltered and unclarified, and features a captivating golden, slightly amber color. The grapes come from a thirty-year-old espalier-trained vineyard, planted on limestone, clay, and tuff soil at an altitude of 231 meters, where significant temperature variations between day and night contribute to a rich aromatic profile. Fermentation is spontaneous, using only indigenous yeasts, and sulfites are minimal. VinNatur certified, it is the authentic and artisanal expression of Cantina Giara's philosophy: a lively, unique, and ever-changing wine.

The roots of this Cicaleccio lie in ancestral macerated wines

Maceration of white grapes on the skins is the oldest winemaking technique, producing the first wines in history, produced thousands of years ago in the Mediterranean and the Caucasus. These "amber" wines, now rediscovered and celebrated as orange wines, revive an ancestral knowledge that gives them intense aromas, structure, and an extraordinary ability to pair with food. Fiano and Falanghina, historic Southern Italian grape varieties cultivated since Roman times, find a surprising and characterful expression in this macerated interpretation. The name "Cicaleccio" evokes the lively and joyful chatter of people, just like the complexity of aromas this wine releases. With this white wine, Cantina Giara creates an artisanal project of rare authenticity, where each bottle speaks of the Apulian land.

Choosing Cicaleccio means taking care of yourself

A wine produced through spontaneous fermentation using indigenous yeasts, macerated, unfiltered, and unclarified, with minimal sulfites, represents a conscious choice for a more natural and authentic drinking experience. The long maceration on the skins preserves and enriches the grape's richness of noble substances: contact with the skins gives this white wine an unusually high concentration of polyphenols and antioxidants. Biodynamic cultivation on calcareous-tuffaceous soil, without synthetic products and with low yields, guarantees a vibrant and authentic product. Any residues and slight cloudiness are natural and testify to the wine's authenticity. Consumed in moderation, it fits into the convivial Mediterranean tradition, showcasing precious native grape varieties.

Best Uses: Cicaleccio Puglia Bianco PGI

On the palate, it's full-bodied and harmonious, with a pleasant texture created by maceration and a good acidity that supports its balance. It's drinkable and has a fruity aftertaste, with a long, fascinatingly complex finish.
