A liquid portrait of a territory: each harvest tells the story of a different season.

Multifloral honey isn't a "generic" honey: it's the exact opposite. While a monofloral honey is created from the prevalence of a single bloom, Multifloral honey gathers everything the bees found at a specific time and place—dozens of different species, wild and cultivated, in proportions that will never be exactly the same. For this reason, each harvest has its own color, aroma, and flavor, ranging from light amber to deep brown, with notes that are sometimes floral and delicate, sometimes warmer and fruitier. It's the honey that best captures the region it comes from and the season's progress. And it's not heat-treated: no pasteurization, no forced heating, just honey as the bees left it.
A hive is an extraordinary exploration machine: the foragers routinely travel up to three kilometers from the hive, covering an area of tens of square kilometers, and it is they—not the beekeeper—who decide which flowers to visit, based on what is available and convenient at the time. When a scout finds a rich bloom, she returns and communicates it to her companions with the famous figure-eight dance discovered by Karl von Frisch, indicating direction and distance with a precision that earned him the Nobel Prize in 1973. A jar of Millefiori is therefore the sum of thousands of these collective decisions: a snapshot of what was blooming on those days, within that flight radius. No other agricultural production is so literally tied to a place and a moment.
Raw honey preserves what heat destroys: the enzymes bees add to the nectar—primarily diastase and invertase—the volatile aromatic compounds, and the pollen grains that testify to its botanical origin. Wildflower honey, due to the variety of flowers it derives from, generally has the richest and most complex profile of all honeys in terms of polyphenols and antioxidant compounds, precisely because it inherits a little from each plant it visits. It is composed primarily of simple sugars—glucose and fructose—which are easily assimilated, making it a ready-to-use energy source. One universal warning: honey should never be given to children under one year of age.

Store in a cool, dry place, away from light, with the jar tightly closed. Do not refrigerate. Over time, honey may crystallize, more or less rapidly depending on the blooms it comes from: this is a natural phenomenon and a sign of authenticity, not a defect. To return it to a fluid state, immerse the jar in warm water, never above 40°C and never in the microwave, to preserve the enzymes and aromas that the cold processing has preserved.
