Giarratana Onion: Authenticity and Artisanal Flavor

The Giarratana onion is the gentle giant of the Sicilian garden: its flat, white bulbs routinely weigh over a kilo—and record-breaking specimens exceed that—yet, against all odds, its flesh is among the sweetest and most delicate an onion can offer. It grows on the Hyblaean Mountains plateau in the Ragusa province, around the village of Giarratana that gives it its name, and is protected as a Slow Food® Presidium: this recognition protects both a unique ecotype and the community of growers who perpetuate it. Its juicy, firm flesh, lacking the aggressive pungency of common onions, makes it extraordinarily versatile: perfect raw in salads, sublime roasted whole, and indispensable in traditional Ragusa focaccia. Just one bulb, and dinner is set.
 
 
 

The roots of this onion are deep in tradition

In Giarratana, the onion isn't just a vegetable: it's an identity. Every August, the Hyblaean village dedicates its famous festival to it, and the streets fill with the most ancient aroma of its cuisine—the onion roasted whole, as it was once done under the ashes of the hearth, until the flesh becomes meltingly sweet and jammy. It's the ritual that has made this gentle giant famous far beyond the plateau's borders: farmers and visitors line up for a steaming bulb, seasoned only with oil and salt. Around that ritual lives a cultivation tradition passed down from family to family, with the seed guarded and reproduced locally: because an onion like this—so large, so sweet, so tied to its plateau—can't simply be bought in a seed catalog. It can only be inherited.
 
 
 

Choosing the Giarratana Onion means taking care of yourself

  • ROASTED WHOLE AS AT THE FESTIVAL: wrap it in baking paper and cook it whole for a long time, until the pulp yields to the spoon; open it like a flower, season with oil and salt and complete with a couple of Spicy Anchovy Fillets in Oil: the sweet-savory contrast that perfumes the streets of Giarratana in August.
  • IN THE RAGUSAN SCACCIA: roll out a thin sheet of pastry with Organic Soft Wheat Flour Type 0 Medium W280, stuff it with stewed onion and Organic Dried Tomatoes into strips, folded and baked: the rolled focaccia of the Iblean tradition, where Giarratana is queen.
  • RAW IN THE GIANT SALAD: a single thinly sliced ​​bulb dresses a salad bowl for the whole family — try it with Organic Purgatory Beans from Alta Valnerina boiled: the sweetness of the raw pulp is the proof of the Presidium.

 
 
 

Food container

Store Giarratana in a cool, dry, and ventilated place, away from light and potatoes. Because of its particularly watery pulp, it doesn't keep as long as common onions: consume it within a couple of weeks to fully enjoy its sweetness. Once cut—and with these sizes, you often end up not finishing it—store the remaining portion in the refrigerator, tightly covered, for a few days. Size and size naturally vary from bulb to bulb.
