These Dried Oranges from Organic Sicilian Oranges represent one of the most difficult and refined achievements in the art of artisanal drying. Oranges are one of the most complex fruits to dehydrate properly due to their extremely high water content (over 85%) and natural sugars, which require meticulous control of temperature and timing to avoid excessive caramelization, browning, or the development of bitterness in the peel. To obtain just 70g of finished product, approximately 700-800g of fresh organic Sicilian oranges of medium size are needed—equivalent to 3-4 whole oranges—creating an extraordinary concentration ratio (approximately 11:1) that encloses in each package the juicy pulp and fragrant zest of nearly a kilo of sunny citrus fruits.

The Sicilian oranges used are certified organic varieties grown in the island's fertile volcanic soil—which may include prized cultivars such as Tarocco, Moro, Sanguinello, Washington Navel, or other local oranges—where the warm-temperate Mediterranean climate, abundant sunshine, day-night temperature variations, and rich volcanic soils concentrate natural sugars, vitamin C, carotenoids, and aromatic essential oils in the pulp and peel. Organic certification is absolutely essential when drying whole oranges with peel, as it guarantees the complete absence of synthetic waxes (polythene, shellac, morpholines) industrially applied to conventional citrus fruits for polishing and preservation, and of residues of pesticides, fungicides, or other chemical treatments that would dangerously concentrate in the peel during drying.

Drying takes place at a strictly controlled, constant temperature of 45-50°C for 18-24 hours. This low-medium temperature strikes the perfect balance: high enough to gradually remove moisture, preventing fermentation or microbial growth, but low enough to preserve the heat-sensitive vitamin C, the peel's volatile essential oils (limonene, linalool, citral), and the carotenoids responsible for the bright orange color. Above all, it prevents rapid caramelization of the sugars, which would cause excessive browning and a burnt-bitter flavor, and the oxidation of the peel's phenolic compounds, which would develop an unpleasant bitterness.

The result is an orange slice with a vibrant, intense orange color, a supple, chewy texture that's not fragile, and an explosive aroma of fresh, concentrated citrus, clearly perceptible between the sweet notes of the pulp and the aromatic, resinous notes of the peel. It also has a complex flavor, blending the natural sweetness of concentrated sugars (fructose, glucose, sucrose), the lively acidity of citric acid, the delicate bitterness of flavonoids in the peel, and the unmistakable aroma of Sicilian oranges in perfect balance. A dried slice captures the sunny essence of the Mediterranean, ready to be enjoyed as is, rehydrated, or used creatively in sweet and savory dishes.

In Sicily, a land of citrus fruits par excellence, where the Arabs introduced bitter oranges as early as the 9th century and the Portuguese brought sweet oranges in the 15th and 16th centuries, the tradition of candied and drying the peel is centuries-old, used to flavor desserts, liqueurs, infusions, and culinary preparations.

Modern, artisanal drying at controlled temperatures preserves nutrients and aromas better than traditional solar drying, which is exposed to climate variations, dust, and insects, creating a product superior in terms of organoleptic quality and food safety.

Choosing Dried Oranges Means Concentrated Vitamin C and Flavonoids

Oranges are renowned for their extremely high vitamin C (ascorbic acid) content, a powerful antioxidant that supports the immune system, promotes iron absorption, protects cells from oxidative stress, and contributes to collagen synthesis.
