Biofavole's Organic Peaches in Syrup are a masterpiece of rural preservation: Percoche peaches selected from the vine when not overly ripe, ensuring the firm, plump consistency typical of quality peaches in syrup. The peaches, hand-picked from the family orchards of Ortezzano di Fermo in the Valdaso hills of the Marche region, are partly left whole, partly cut into segments and pitted, then immersed in a simple syrup made from just two ingredients: water and organic sugar. No chemical preservatives, no colorings, no artificial flavors, no added citric acid. Washing, trimming, sorting, and packaging in sterile glass jars are performed entirely by hand by the company's laboratory staff, before being gently pasteurized to ensure long-lasting, safe preservation. The purity of the fruit and the simplicity of the syrup bring back memories of the Marche summer that saw them ripen in winter.
 
 
 

The roots of these Peaches in Syrup are deep in tradition

The Percoca peach is an ancient variety with firm yellow flesh, traditionally grown in central and southern Italy and considered the "queen of peaches for preserving" since the 16th century. Its name derives from the Latin "praecoquus"—early fruit—and it has specialized over the centuries precisely because of its suitability for syrup: the crisp, slightly watery flesh retains its structure and flavor even after cooking in syrup. Preserving fruit in syrup is an ancient technique, already described in Apicius' "De Re Coquinaria" in the 1st century AD, when the Romans preserved summer fruit in honey and sweet wine to enjoy at winter banquets. In the Italian countryside, every peasant family had their own "peach jars": women devoted entire summer afternoons to preparing precious supplies, capable of bringing the flavor of the sun into the colder months.
