Blueberries are not a Mediterranean crop: they grow wild in the mountains, in the acidic undergrowth of conifers and beech forests, which is why their arrival in the Lazio countryside would seem unlikely. If they do work, it's for a specific geological reason: the Castelli Romani area sits on an ancient volcanic complex, and the resulting soils are deep, rich in minerals, and naturally acidic—exactly the conditions berries thrive in. It's on this foundation that in recent decades, a small, specialized fruit growing industry has emerged just outside Rome, consisting of small farms growing blueberries, raspberries, and blackberries a short distance from the city. As for dehydration, it's the oldest preservation technique known to man: before salt, before fire, it was the sun that dried the fruit for the winter.
The blue-purple color of blueberries is due to anthocyanins, among the most studied antioxidant pigments in the plant world, alongside fiber, vitamin C, and other phenolic compounds. Dehydration concentrates these elements along with the fruit's natural sugars: this means more flavor and more substance in a smaller volume, but also a higher caloric density than fresh ones, so a handful is the perfect serving. They're a convenient and nutritious snack, easy to carry in your bag or to the gym, and an easy way to add fruit to breakfasts and recipes any time of year.

Store in the refrigerator, in an airtight container, or in a tightly closed container: humidity is the main enemy of dehydrated fruit and can cause it to clump together. If the blueberries are too dry, simply soak them for a few minutes in warm water or fruit juice to soften them, ready for baking and desserts.
