Organic Tellicherry Black Peppercorns

A fine pepper with rich and complex aromas, with particularly large grains

The prince of black peppers, woody and aromatic, a sublime enhancer of meats and juicy fruits.

Pepe Tellicherry from Les Jardins de Gaïa

Les Jardins de Gaïa's Organic Tellicherry Black Peppercorns are one of the world's oldest and most famous peppers. They are distinguished by their particularly large grains, which release a woody and intensely aromatic fragrance. Native to southern India and grown biodynamically according to fair trade principles, this black pepper is the perfect seasoning for steaks and grilled meats, but also a fabulous flavor enhancer for juicy fruits like strawberries and peaches. Considered the pinnacle of black pepper, Tellicherry owes its excellence to its longer ripening on the plant, which concentrates its aromas. Ideally ground fresh, it is a connoisseur's spice, pure and authentic, the fruit of respectful agriculture.

The roots of this pepper are found in the Indian coast of Malabar.

Tellicherry pepper takes its name from the town of Thalassery (formerly Tellicherry), on the Malabar Coast of southern India, a historic pepper region. What makes it unique is its selection: only the largest grains, left to ripen longer on the plant, can bear this name, acquiring an aromatic complexity and a concentration of essential oils superior to common black pepper. For centuries, pepper has been the driving force of trade between East and West, so precious that it was worth as much as gold in ancient Rome and the Middle Ages. Tellicherry represents the absolute pinnacle of this noble tradition. Les Jardins de Gaïa preserves its authenticity with a biodynamic and fair trade supply chain, showcasing one of the most sought-after spices by chefs around the world.

Choosing Tellicherry Pepper means taking care of yourself

Like all great peppers, Tellicherry is rich in piperine, the active ingredient responsible for its spiciness, known for aiding digestion by stimulating the production of gastric juices and for its antioxidant properties. Piperine also increases the absorption of other nutrients and active ingredients. Extended ripening on the plant enriches this pepper with particularly valuable aromatic essential oils. Its intense aroma allows you to flavor dishes while reducing the use of salt, benefiting a more balanced diet. Grinding it freshly preserves all its complexity. Its organic and biodynamic origins guarantee a pure and high-quality spice.

How to Best Use: Tellicherry Black Peppercorns

  • ON STEAKS AND GRILLED MEATS — It is the seasoning of choice for meat with character. A freshly ground mixture of its large grains on a Rib steak or on a fillet steak enhances its juiciness and flavor.
  • THE SURPRISE JUICY FRUIT ENHANCER — Its most fascinating feature: it enhances sweet fruit. Try it ground on Organic Strawberries fresh or on slices of Organic Yellow Peaches, where it unexpectedly amplifies its aroma and sweetness.
  • IN JAMS AND SWEET PREPARATIONS —An original idea: a touch of Tellicherry transforms a jam. Add a pinch of ground Tellicherry to a homemade strawberry or peach jam, or liven up a organic strawberry compote for a refined sweet-spicy contrast.
